13 RECIPES. CLASS 30. CARROT CAKE.. Pre heat oven gas4: electric 170C (350f) approx Grease and line a 9in round tin. Ingredients.. 300grms- SR. Flour, 300grms- dark brown sugar, 3.eggs, 300ml-vegetable oil, 1tsp-bicarb.of soda, 2tsp- ground cinnamon, 1tsp- ground ginger, 1tsp- salt, 300grms- grated carrot. METHOD. 1.With electric whisk beat eggs with sugar in a large bowl.. add oil and beat well. 2.Sieve flour..bicarb..cinnamon..ginger and salt together and fold into wet ingredients finally fold in grated carrot. 3.Pour into prepared tin, bake in pre heated oven for approx..1hr. or until skewer comes out clean. 4. Leave to cool on a wire rack. 5.NO TOP DECORATION. 11
14 CLASS 31.. SUGAR AND SPICE RINGS. PRE HEAT OVEN Gas 7 Electric 425F/220C approx WELL BUTTER 8in round cake tin or deep sandwich tin. INGREDIENTS. lb SR flour.. tsp. salt.. 1 butter.. pt milk. FILLING. 1oz melted butter.. 2oz caster sugar.. 1 level tsp cinnamon.. 1 oz currants.. METHOD. Sift flour and salt in bowl. Rub in butter finely. Add milk all at once; mix to soft but not sticky dough with knife turn on to lightly floured board. Knead until smooth. Then roll into rectangle app. 12in x 8in. Brush with melted butter to within approx in. of edges. Mix sugar, cinnamon and currants, sprinkle over butter, moisten edges of dough with water, roll up like a swiss roll, starting from a long side; cut into 12 slices, arrange cut sides down in tin; bake in top of oven for 15/20 mins., or until well risen and golden. Cool on a wire rack. 12
