4 P A G E 4 From the President Hello members! What a great time we had at this month s Wacky Tacky luncheon. Everyone looked fabulous and lots of you walked away with some wonderfullytacky prizes. I am looking forward to our next luncheon with much anticipation, too. Our International Spouses will be hosting our annual tea, educating us on Christmas traditions from around the world. They always decorate our tables beautifully with items from their countries and treat us to homemade, delectable desserts. As this is a tea, please wear your Sunday best...no jeans, please. And HOLLYDAY BAZAAR is less than a week away! A huge thank you to all our team members and volunteers who are working diligently to ensure this is yet another amazing fundraiser. We have over 100 vendors, food vendors, a DJ, entertainment, beer & wine, boiled peanuts & kettle corn and, of course, Santa Claus. This is a great opportunity to get a jump-start on your holiday shopping. As the weather turns much cooler, I hope you will all stay safe and warm. Wishing you a blessed and Happy Thanksgiving. 6 P A G E 6 VOLUNTEER SPOTLIGHT Congratulations to Meg Smyrski FRCSC s October Volunteer of the Month Meg was a ready volunteer and has been working hard each month to get luncheon information out to our members and then getting everyone checked-in. She also attends the monthly Newcomers Brief to make sure families new to Rucker know about the FRCSC. Thanks for all you do Meg!

12 P A G E 12 Thanksgiving Leftovers Done Right! Ever wonder what to do with all that leftover turkey and stuffing (assuming you have any, that is)? Well this recipe is an excellent way to keep your family gobble gobble happy! Thanksgiving Leftovers Stuffed Shells 1 12oz box jumbo pasta shells 2 C cubed cooked turkey 1 1/2 C leftover stuffing 1 4oz pkg cream cheese, softened 1/2 C parmesan cheese 1/3 C mayonnaise 4 C shredded mozzarella cheese 1 1/2 C leftover turkey gravy Directions Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish. Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the shell pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 13 minutes. Drain well in a colander set in the sink. Place turkey and stuffing in food processor, and pulse until finely ground and combined. Place the ground turkey and stuffing mixture in the bowl of a stand mixer along with the cream cheese, Parmesan cheese, mayonnaise, and 2 cups of the mozzarella. Mix with paddle attachment on medium-low until well blended. Spread 1/2 cup of gravy on the bottom of the prepared dish. Stuff the pre-cooked pasta shells with the turkey mixture and place in the dish in tight rows. Top with the remaining gravy and the remaining 2 cups of mozzarella cheese. Bake, covered, for 45 minutes. Uncover and cook for an additional 10 minutes until top is browned and bubbly. Allow to cool for 5 minutes before serving. Serves 8.

P A G E 13 The Nov. 11 ROWA luncheon was a special time for us to acknowledge our veterans and express appreciation for their military service which contributed significantly to the freedoms we hold dear. Their legacy of courage and perseverance continues to inspire many today. A number of them representing various branches of service were our guests. That military heritage connects us, yet our membership is certainly diverse with varied interests, talents, and age levels. This could certainly be seen in Nov. Our guest speaker for this luncheon was none other than our own member, Mrs. Esse Muskopf who is a veteran herself! She spoke of her experience from entering service in the U.S. Army to becoming an officer and retiring as a Major. While in the Army she met her husband, now Col. James Muskopf. Interesting statistics of women in the military were given, such as the first female to receive the Medal of Honor who was Surgeon Mary Walker during the Civil War. Another example of our diversity was noted as we applauded our own Mrs. Donna Fearing who is a motorcyclist. Yearly she and her husband ride cycles and attend the BMW Falling Leaves Rally during October in Missouri. The round trip from Enterprise is 1428 miles. This year Donna received the Oldest Female Solo Rider Award (She is only 80!) and the Longest Distance Female Solo Award! Our next ROWA meeting is at The Landing Dec. 9 for a Christmas luncheon and ornament exchange. Guess are welcome. Please contact me at or Vicky at for reservations. 14 L U N C H B U N C H P A G E 14 The Lunch Bunch started in late September and we ve been busy ever since finding and sharing great places to eat in the local and surrounding areas. Our first outing was to the historic Rawls Hotel in downtown Enterprise. We all agreed the atmosphere was amazing, the food was terrific and it would be a GREAT place to bring our spouses for date night (would probably get a sitter for the kids). Our second outing was to Cactus Flower Café in Dothan. This is a nice café serving authentic Californian style Mexican cuisine. We discovered it s actually a small, family chain with locations in Gulf Shores and Pensacola too. It s perfect for a lunch outing with a friend or a weekend late lunch (family friendly). It is open for dinner Monday through Saturday. Our final outing was to Fire Stone in Dothan. They serve wood fired pizza, wonderful salads & sides. The atmosphere is inviting, perfect for a ladies lunch, business lunch and the evenings are great for a date night! It s kid friendly, but the menu is not geared towards kids that may be a bit picky!! Upcoming Lunch Bunch outings Monday, November 17 th at Divots on Fort Rucker (staying close to home) Monday, December 8 th at House of Thai in Dothan (hope to fit some Christmas shopping in while in Dothan) If you re looking for conversation, laughs and great food come join us for a Lunch Bunch outing. Fort Rucker Community Spouses Club s Wine Sub-Club s December Event will be 9 December at six o clock. We will be meeting Culinary Concepts of Enterprise for a cooking with wine demonstration. The cost is $20.00 per person. Some Wine Tasting Basics - FYI Learning to taste wine is not unalike learning to appreciate music or art in that the gratification you receive is proportionate to the effort you make. The ability to sniff out and untangle the subtle threads that weave into complex wine aromas is useful for tasting. The more you finetune your sensory abilities, the better you re able to understand and enjoy the distinctions and particulars that wines express. Cooking smells, perfume and even pet odor can destroy your ability to get a clear sense of a wine s aromas. A glass that is too small, the wrong shape, or smells of detergent or dust, can also affect the wine s flavor. The Wine temperature will also have an impact on your impressions, as will the age of the wine and any residual flavors from whatever else you have been eating or drinking. Other factors - observing, swirling, sniffing and tasting all come into play when it comes to wine. Please join us to learn more! W I N E C L U B

It was a very challenging and hilly course but the effort made by everyone was outstanding! We are branching out into other things than just running. If you are interested in meeting up with us please send an to Mimosa Whiting spcmiso@hotmail.com to be put on the list. Several of the sub-club ladies are also apart of the RWB. They are a very well organized and have some kind of fitness activity going on almost everyday of the week at various times.
