2 Oklahoma Home and Community Education McCurtain County Officers 2018 President Kathy Fentress (580) Vice President Jacque Compton (580) Secretary Kathy Coffey (580) Treasurer Pat Chapman (580) Reporter Rikel Bundy (580) Oklahoma Home and Community Education, Inc., is a program of continuing education in all aspects of home and community life. The organization's ultimate mission is to educate its members to be wellinformed and able to handle change in their homes and communities. Through its relationship withe the Oklahoma Cooperative Extension Service, OHCE presents research-based information to its members. Monthly educational lessons, leadership development and community service projects provide OHCE members an opportunity to apply this research based information in their homes and communities. The Cooperative Extension Service is based at Oklahoma State University with offices and Extension Educators serving each county. OHCE is a statewide and county based organization. County Extension Educators, Family and Consumer Sciences serve as advisors to county HCE organizations. District and State Cooperative Extension Specialists and supervisors work with County Extension Educators and the OHCE program. Working in a cooperative effort, OHCE members and Extension Educators identify local issues facing families. these issues become the basis for OHCE educational programming and efforts are made to help families solve these problems. OHCE is in a unique position to help individual members and their families and communities develop a higher level of living through education. No other organization is better poised to develop community leaders and informed citizens through research based educational programs. The Oklahoma State University Cooperative Extension Service offers its programs to all eligible persons regardless of age, race, color, religion, sex, sexual orientation, genetic information, gender identity, national origin, disability, marital or veteran status, or any other legally protected status. OCES provides equal opportunities in programs and employment. 2

3 RULES: OPEN CLASS 4-H FOOD PRESERVATION and FAMILY AND CONSUMER SCIENCE BUILDING 1. General rules and regulations of the McCurtain County Free Fair shall apply to this department. 2. No entry fee is required. 3. One entry per person per class in this department.. 4. All articles in the Family and Consumer Sciences Department must be the work of the exhibitor, with the exception in Household Furnishings: Professionally Quilted Quilts and Quilts Quilted by an Organization or Group of two or more persons. 5. Articles which have been exhibited at any other County Fair will not be accepted for competition. 6. All exhibits (sponsored by the McCurtain County Fair Board) must be homemade and free from alteration. 7. All handiwork must have been completed since the previous McCurtain County Free Fair. 8. Entry items must be clean and pressed, where applicable. 9. Any female or male living in McCurtain County is eligible to compete in this department. 10. The Family and Consumer Sciences Building will be closed during the judging to all except the judging staff. 11. Unless otherwise specified, awards for this department are as follows: Champion = $5.00, Reserve Champion = $4.00, First Place (Blue Ribbon) = $3.00; Second Place (Red Ribbon) = $2.00; Third Place (White Ribbon) = $ All Exhibitors are strongly urged to pick up their exhibits at the Family & Consumer Science Building, on the last day of the fair (Saturday) by 4:00 pm. If this is not possible, the exhibits will be available for pick up at the Family & Consumer Science Building, on the following Monday from 9:00 11:00 am. If any exhibits remain in the building after these 2 available pickup times, they will be taken to the OSU Extension office in the McCurtain County Courthouse. FOOD PRESERVATION Rules: All canned goods: 1. To be exhibited in quarts, 1-1/2 pint, pint or half-pints only of standard canning jars and MUST be sealed at the time of judging. Jams, jellies, marmalades and preserves may be exhibited in half-pints or jelly jars. 2. Exhibitor must have done the canning since the last McCurtain County Free Fair 3. Only one entry per person per class 4. Clean jars only; no rusty lids or rings 5. All canned goods will be judged on texture, uniformity, pack, consistency and regulation canning jar. 6. Absolutely no PARAFFIN. 7. Grand Champion and Reserve Champion ribbons will be awarded in four categories: Fruits, Vegetables, Pickles and Jams, Jellies, etc. YOUTH OPEN CLASS FOOD PRESERVATION CANNED VEGETABLES Rule: Must have one (1) inch head space Section Asparagus 2. Miscellaneous BALL/KERR AWARDS Jarden Home Brands, marketers of Ball and Kerr Fresh Preserving Products is proud to recognize today s fresh preserving (canning) enthusiasts. First and Second Place Awards will be given to individuals judged as the best in designated categories. A panel of judges will select the two best entries for Fruit, Vegetable, Pickle, and Soft Spread categories. Entries must be preserved in Ball Jars sealed with Ball Lids and Bands, or Ball Collection Elite Jars sealed with Collection Elite Lids and Bands, Ball Heritage Collection Jars sealed with Ball Lids and Bands, or preserved in Kerr Jars sealed with Kerr Lids and Bands. In addition, soft spread entries must be prepared using Ball Pectin: Classic, Low or No-Sugar Needed or Liquid. Entries designated First Place from each category will receive the following: Two (2) Five Dollar ($5) coupons for Ball or Kerr Fresh Preserving Products and One (1) Free (up to $5value) Coupon for Ball Pectin. Entries designated Second Place from each category will receive the following: One (1) Five Dollar ($5) coupon for Ball or Kerr Fresh Preserving Products and One (1) Free (up to $5 value) Coupon for Ball Pectin. 6

Bread Machine *COUNTY CONTEST RULES are as follows County winners (excluding bread machine class) will receive awards from the Oklahoma Wheat Commission. No Premiums awarded. Recipes winning first place at the 2017 State Contest are ineligible to compete. Each entry must be prepared and baked by the person whose name is on the entry form The same person may not win Champion, Reserve Champion or Bread Machine Class. Two separate people should win, unless entries do not offer that selection. Recipe must accompany entry at county and state level. Entries which are eligible to compete at state level will provide 2 recipesone at county fair (which will be mailed to Commission office by County Extension Educator) and bring one with entry at state competition. Whole Grain Bread Class #2-This category will include only the use of whole wheat flour and/or whole white wheat flour. No Allpurpose or Bread flour included in this category. Dough enhancers, vital wheat gluten and whole grains, in addition to whole wheat, are permissible. Dinner rolls should consist of three (3) rolls per entry. Any shape acceptable. Specialty Shapes Class 11-Let your imagination go: animals, people, objects, etc. (All garnishes must be edible.) The OTHER WHEAT BREADS, class numbers 4 and 9 will include other breads made with yeast such as cheese, French, onion, sourdough, challah, etc. NO QUICK BREADS unless yeast is used as a leavening agent. (All breads must use yeast as a leavening agent.) Best of Wheat, formerly Wheathearts, sponsored Bread Baking Contest is to be judged separately from the county fair open class division. County Champion and Reserve Champion from each division are eligible for state competition (see exception below) at the State Fair of Oklahoma on September 23, One (1) Bread Machine entry from each division, class #6 and #12, determined by county judge, will be eligible for competition at state level. Bread machine entries will not be eligible for County Champion or Reserve Champion at county level or eligible for Grand Champion at state level. *The 2018 State Fair of Oklahoma catalog contains the final written rules governing this contest.
