Only Gift Packs, ribbons and checks are to be picked up. 2. Baking & Confection Entries: Must be home-prepared by the exhibitor, no package mixes. Must have been made by an amateur. Must be the quantities and sizes specified in Premium Book. 3. Pies must be on aluminum pie plates, all other items on white paper plates or heavy cardboard and covered with plastic bags or saran-type wrap. Bread may be in plastic bags. 4. Management has the right to remove/or dispose of food items if they deteriorate during the fair. 5. Canning & Preserved Entries: Must not have been shown at a previous Gold Country Fair. Must have been made by the exhibitor within one year of the opening date of the Fair. Must be sealed in standard canning jars (See Rules 6 & 7). Must be two jars of the same size, and of the same batch. 3. All dried products must be wrapped or sealed in clear plastic, or sealed in clear jars. 4. Must be in the quantities and sizes specified in Exhibitor Handbook 5. Foods that require refrigeration cannot be entered. 6. Standard Jars: Must be a clear glass container specifically designed for canning purposes. All canning may be in a quart, pint or half pint jar. No special covers or lids allowed and No drinking Jars allowed. 7. Seals: All jars must be tightly sealed, with rings. No paraffin seals allowed. 8. Labels: All jars must be neatly labeled with two small labels (not larger than 2" x 2", as labels block view of contents). LABEL ON FRONT OF JAR to state: name of product, date of pack, method used. LABEL ON BOTTOM OF JAR to state: division number, class number, exhibitor s name. 9. Methods of Canning - Jams and jellies - open kettle or water bath. 10. Tomatoes and fruits (not including their juices) - simmering water bath (or under pressure). 11. All vegetables and non-acid foods - under pressure. 12. Low-acid foods - under pressure. 13. Low-acid fruit such as figs, should be made more acid by adding lemon juice, as directed in the University Agriculture Extension Service leaflet Home Canning of Fruits and Vegetables. 14. Two Jars: One jar of all products being considered for awards, which have not otherwise been eliminated from consideration, WILL BE OPENED. The other jar will be for display. Judge will decide which jar will be opened. Opened jars may be picked up by exhibitor on Thurs. after judging or on Monday following the Fair.
