Sept. 5 September Lesson (Tues) Probiotics 1:00pm at LaRue County Extension Office Instructor is Cabrina Buckman, Washington Co. FCS agent. Probiotics are friendly bacteria and are important to a healthy gut. But do you know their source, how they work in your body and how they keep your body healthy? Program will cover the importance and sources of probiotics. The gut contains a balance of good bacteria and harmful bacteria. This balance can be thrown off when there is an increase in harmful bacteria by the use of antibiotics, after some surgeries, and in some diseases. The health of the body depends on the balance between good and bad bacteria. Class is sponsored by the County Homemaker organization. No registration required, open to everyone. Sept. 6 County Homemaker Council & Officer Training- 2:00pm at the Extension Office. Proposed agenda will be sent to council members. Will also distribute Homemaker materials/calendars for this year to clubs. Anyone can attend and share your quilt work, tip ideas and quilting techniques. Open Sew Days are held at the Extension Office on 4 th Mondays from 10a 2p. The Nifty Needles group meets and works on various service projects. Recent projects have been: making comfort caps for area cancer/medical patients; making youth clothing items (shorts and dresses) for an international charity; and making superhero capes for local preschool class rooms. Anyone can join in to help. If you don t sew, you will be given other duties. Everyone welcome. Group is led by Master Clothing Volunteer, Rosa Smith. If you have an idea for a future service project, contact her at Sept. 26 October Lesson (Tues) Baking and Breaking Bread Together 10:00am at the LaRue Co. Extension Office. 2 Office Construction Update We are enlarging the rear meeting room at the Extension Office. Construction will begin in September and last through the Fall. UK Ovarian Cancer Screening Program All women over the age of 50 (including those who have no symptoms and no personal history of Ovarian Cancer) are eligible for free ovarian cancer screening. Women over the age of 25 who have a family history of the disease are also eligible for free screening. You can schedule an appointment by calling or Most screenings are done on campus at the University of Kentucky; however, some screenings are offered periodically in our area at the Hardin County Health Dept. site. You still must use the above phone numbers to schedule for the E town site. For more info go to Many adults may think that vaccines are only for children. But did you know there are several vaccines that adults should get as well? It is recommended that adults get the flu vaccine every year. This vaccine helps protect adults against the seasonal flu and can lessen the symptoms if the flu is caught. It is also recommended that adults get the Td/Tdap vaccine. This is a vaccine that protects against tetanus, diphtheria and pertussis. Pertussis is also known as whooping cough. Additionally, depending on the age of a person and their health conditions there may be a need for additional vaccines and boosters such as: If you will be travelling to places overseas, you also may need vaccines. Vaccines are needed throughout life, not just as a child. Talk to your healthcare provider today to see if there are vaccines that you may need. 8 5 cups torn leaf lettuce 2 1/2 cups spinach leaves 1 medium red apple, chopped 1 medium pear, chopped 4 teaspoons lemon juice 1/4 cup dried cranberries 1/4 cup feta cheese crumbles 1/2 cup chopped walnuts Dressing: 2 1/2 tablespoons olive oil 2 tablespoons balsamic vinegar 1 1/2 teaspoons Dijon mustard 2 teaspoons Kentucky honey 1/2 teaspoon salt Combine leaf lettuce and spinach leaves in a large salad bowl. Mix apples and pears with lemon juice in a small bowl and add to lettuce mixture. Prepare dressing by whisking together the olive oil, balsamic vinegar, Dijon mustard, honey and salt; pour over lettuce mixture and toss to coat. Sprinkle salad with cranberries, feta cheese and walnuts. Serve immediately. Yield: 8, 1 cup servings Nutritional Analysis: 130 calories,9 g fat, 1.5 g sat fat, 240 mg sodium, 12 g carbohydrates, 3 g fiber, 7 g sugar, 3 g protein. 4 cups cubed potatoes 2 heads broccoli, (3-4 cups florets) 2 tablespoons olive oil 1/4 cup all-purpose flour 1/3 cup melted butter 3 cups 2% milk 1/4 teaspoon salt 1/2 teaspoon pepper 5 ounces cheddar cheese, reduced-fat, shredded 2 green onions, finely minced, divided 1/2 cup reduced-fat sour cream 1/4 cup bacon bits (optional) Preheat oven to 375 degrees F. Place potatoes in large saucepan, cover with water and bring to a boil. Reduce heat and cook potatoes until tender, about 15 minutes. Cut broccoli heads into small florets and place on baking tray. Drizzle with olive oil and roast for 15 minutes. Drain cooked potatoes in a colander. In the saucepan, combine the flour and melted butter; cook on medium heat for 1 minute. Slowly add milk to the mixture, stirring constantly until thickened. Soup can be thinned by adding an additional 1/2 cup of milk or water, if desired. Add the potatoes, broccoli, salt, pepper, cheese, half of the green onions and bacon bits. Cook on low until heated. A few minutes before serving, add the sour cream and stir to combine. Serve topped with remaining onions. Yield: 6, 1 1/4 cup servings Nutritional Analysis: 390 calories, 24 g fat, 13 g saturated fat,60 mg cholesterol, 370 mg sodium, 30 g carbohydrate,3 g fiber, 9 g sugars, 15 g protein. 1/2 cup all-purpose flour 1 1/4 cup whole-wheat flour 1 1/2 teaspoons baking powder 1 teaspoon baking soda 2 teaspoons pumpkin pie spice 1/2 teaspoon salt 1/2 cup melted margarine 1/2 cup sugar 1/2 cup honey 2 cups pumpkin puree 1/3 cup olive oil 2 eggs 1/3 cup chopped walnuts Heat oven to 350 degrees F. Mix flours, baking powder, baking soda, pumpkin spice and salt; set aside. In a large mixing bowl, whisk together margarine, sugar, honey, pumpkin puree and olive oil. Blend in eggs. Add flour mixture. Stir until dry ingredients are moistened. Spray a 8-by-4 inch loaf pan with non-stick cooking spray. Pour batter into pan; sprinkle walnuts on top of batter. Bake for 1 hour. Remove from oven and cover with foil. Return to oven and bake an additional 20 minutes or until toothpick inserted in center comes out clean. Cool for 10 minutes and remove from pan. Yield: 16 slices Nutritional Analysis: 220 calories, 13 g fat, 2 g saturated fat, 30 mg cholesterol, 270 mg sodium, 26g carbohydrate, 1 g fiber, 14g sugars, 4 g protein
