We wish to expand opportunities to obtain low-cost housing, cultural awareness, recreational opportunities, and to assist in improving health care. We would akin to all other activities, which will improve the economic, educational, and social welfare of the Rutherford County Residents. 2 Their dying fire in need of logs; The first woman held hers back, For the faces around the fire, She noticed that one was black. The next man looking across the way Saw not one from his church, And couldn t bring himself to give, the fire his stick of birch. The third one sat in tattered clothes. He gave I coat a hitch, Why should his log be put to use, To warm the idle rich? The rich man just sat back and thought Of the wealth he had in store, And how to keep what he had earned, From the lazy, shiftless poor. The Blackman s face bespoke revenge As the fire passed from sight, For all he saw in his stick of wood Was a chance to spite the White. The last man of this forlorn group Did naught except for gain, Giving only to those who gave, Was how he played the game. The logs held tight in death s still hands Was proof of human sin, They didn t die from the cold without, They died from the cold within. A Summary of Chanukah Every year during the end of November and the end of December, Jewish people around the world celebrate the holiday of Chanukah, The Festival of Lights. Chanukah begins on the 25th day of the Hebrew month of Kislev, but the starting date on the western calendar varies from year to year. The holiday celebrates the events, which took place over 2,300 years ago in the land of Judea, which is now Israel Antiochus was a Syrian king, who ruled Judea long ago. The king ordered the Jewish people to reject their God, their religion, their customs and their beliefs and to worship the Greek gods. There were some who did as they were instructed, but many refused. One who refused was Judah Maccabee Judah and his four brothers formed an army and chose as their name the word Maccabee, which means hammer. After three years of fighting, the Maccabees were finally successful in driving the Syrians out of Israel and reclaimed the temple in Jerusalem. The Maccabees wanted to clean the building and to remove the hated Greek symbols and statues. On the 25 th day of the month of Kislev, the job was finished and the temple was rededicated. When Judah and his followers finished refining the temple, they wanted to light the eternal light, known as the N er tamid, which is present in every Jewish house of worship. Once alit, the oil lamp should never be extinguished. Only a small jug of oil was found with only eno7ugh to last a single day. The oil lamp was filled and lit. Then a miracle occurred as the tiny amount of oil stayed alit not for one day, but for eight days.

3 The Jewish celebrate Chanukah to mark the victory over the Syrians and the rededication of the Jerusalem Temple. The Festival of the Lights; Chanukah, last for eight days to commemorate the miracle of the oil. The word Chanukah means rededication. In America, families celebrate Chanukah at home. They give and receive gifts, decorate the house, entertain family and friends, eat special foods, and light the holiday menorah. The Chanukah Menorah is called a Hanukiyah. It has nine candleholders. There are eight candles, one for each night of Chanukah. The ninth is called the Shamash. The Shamash is used to light the other eight candles. The Shamash is lit first and then is used to light the other candles. The candles are placed in the Hanukiyah from right to left, but when the candles are lit, you light from left to right. Ba-ruch ata, A-do-nai E-lo-hei-nu, me-lech ha-o-lam, she-he-chya-nu ve-ki-ya-ma-nu vehi-gi-a-nu las-man-ha-zeh. Chanukah favorites Honey Glazed Lamb Ingredients: 1 cup honey 1/2 cup dry white wine 4 tablespoons minced fresh mint salt and pepper, to taste 8 pounds boneless leg of lamb, (2 whole legs) Instructions: 1. Combine honey, wine and mint; mix well. 2. Season cut side of boned lamb with salt and pepper, then spread with honey mixture; roll and tie lamb. Brush outer surface with honey mixture. 3. Roast on rack in shallow baking pan at 325 degrees F 1 to 1-1/2 hours or to 160 degrees F on meat thermometer for medium doneness. Baste every 15 minutes. 4. Let stand 10 to 15 minutes before slicing. The Prayer for Chanukah Candle-Lighting Note: Every night during Chanukah, when the candles are lit this is the prayer that is recited. Ba-ruch ata, A-do-nai E-lo-hei-nu, me-lech ha-o-lam, a-sher ki-de-sha-nu be-mits-vo tov, ve-tsi-va-nu le-had-lik neir shel Chan-nu-kah. Ba-ruch ata, A-do-nai E-lo-hei-nu, me-lech ha-o-lam,she-a-sa ni-sim las-a-vo-tei-nu baya-mim ha-heim ba-ze-man ha-zah. Source: The Red Hot Chili Paper Chanukah Cookies Ingredients: 1/4 lb. soft butter or margarine 1/2 c. sugar 2 egg yolks 1 tsp. orange juice 1 tsp. vanilla 1 1/2 c. flour 1/2 tsp. baking powder

4 1/4 tsp. salt Instructions: 1. Cream butter and sugar. 2. Add egg yolks; mix again. 3. Add orange juice and vanilla; mix until smooth. 4. Add dry ingredients and mix. 5. Roll dough and cut into holiday shapes. 6. Bake at 350 degrees for minutes until edges are brown. Ingredients: Cheese Blintzes 1 lb. dry cottage cheese, creamed well with 1 beaten egg 1/2 tsp. salt Sugar & cinnamon if desired BATTER: 2 eggs 3/4 c. sifted flour 1/2 c. milk Pinch of salt Instructions: 1. Beat eggs. 2. Add milk and then flour, beating until smooth. 3. Drop in frying pan a tablespoon at a time. 4. When done on bottom, loosen around edges if necessary and turn out on a plate. 5. Place about a tablespoon of cheese in each omelet and roll, fastening with toothpicks if necessary. 6. Brown in butter in skillet. To get thin omelet, let skillet cool before placing batter in it. 7. Makes 1 dozen small blintzes. 8. Serve with sour Source: The Red Hot Chili Paper A Summary of Kwanzaa Kwanzaa (kwahn-zaah) is an American holiday inspired by African traditions. This festival is celebrated for a total of seven days, December 26 through January 1. Kwanzaa (kwahn-zaah) is a Swahili word, which means first fruits of the harvest. The extra a was added at the end of the word to give the word seven letters, representing the seven principles [Nguzo Saba (en-goo-zo sah-bah)] of the holiday. The seven principles are Umoja (oo-moejah), Kujichagulia (koo-jee-cha-goo-leeah), Ujima (oo-jee-mah), Ujamaa (oo-jahmaah), Nia (nee-ah), Kuumba (ku-oom-ba), and Imani (ee-mahn-ee). Maulana Karenga, Ph.D., created Kwanzaa in He is the professor and chair of Black Studies at the California State University at Long Beach, and executive director of the Institute of Pan-African Studies. Thanks to Maulana Karenga, these seven principles are the heart and soul of Kwanzaa, and are based on the commemoration of the ancestors, the unification of family, and the offering of thankfulness of life s good. Today millions of families within the United States look forward to this beautiful African inspired festival and celebrate the bountiful delights of Kwanzaa. To prepare for Kwanzaa, Families use different symbols to decorate their homes.

5 They first place the mkeka (em-kay-kah), which is a straw placemat upon a table. Then they place an ear of corn for each child on the table, this is called muhindi (moo-hin-dee). Families that contain many children place lots of muhindi (moo-hin-dee) on their table along with pears, apples, bananas, yams, and nuts to remind them of the earth s abundance. These fruits and vegetables are called mazao (mah-zah-o), which means crops. Kinara (kee-nar-rah), a wooden candleholder holds seven candles, and is placed upon the mkeka (em-kay-kah). There is one black candle in the middle, which represents the richness of our skin. There are three red candles placed to the left of the black candle and three green candles place to the right of the black one. The red candles represent the struggles and hardships that we face. The green candles encourage us to look towards a more prosperous future. For each day of Kwanzaa, one candle is lit to symbolize a special principle. These beliefs help us to learn, achieve and grow. The above-mentioned principles are beliefs possessed by many families throughout Africa. Umoja (oo-moe-jah), the first principle, celebrated on the first day of Kwanzaa; represents unity. The black candle is alit. The family gathers at home, sharing thoughts, feelings, and relaxing in the spirit of unity. They greet each other by asking Habari gani (hah-bar-ee gah-nee)? Habari gani (hah-bar-ee gah-nee) translates What s the news? It is used throughout the celebration period, and when asked Habari gani (hah-bar-ee gah-nee)? The reply is the Kwanzaa principle for that particular day. On the second day, Kujichagulia (koo-jee-cha-goo-lee-ah) is the answer for Habari gani (hah-bar-ee gah-nee)? Kujichagulia (koo-jee-cha-goo-lee-ah) means self-determination. A red candle is alit on this day. This is the day when families gather to learn traditions such as playing different rhythms upon drums and gourds, pottery, basket weaving, and hair braiding. On the third day, Ujima (oo-jee-mah) is the answer to the Kwanzaa greeting Habari gani (hah-bar-ee gah-nee)? Ujima (oo-jeemah) means responsibility and collective work. On this day a green candle is lit, the family will gather and assist one another with different tasks and chores. Habari gani (hah-bar-ee gahnee)? on the fourth day is answered with Ujamaa (oo-jah-maah). This Principle means joint economics, and is represented by lighting another red candle. This day, the family will utilize the spare coins that they saved throughout the year to purchase a family gift. This gift will be shared, utilized, and enjoyed by the entire family. The fifth day is represented when the second green candle is set alight. This is the day of the Fifth Principle Nia (nee-ah), meaning our purpose. Today the family will examine the greatness within ones-self, set goals, and picture their futures. Kuumba (ku-oom-bah) meaning creativity is celebrated and the final red candle is illuminated on this sixth day of Kwanzaa. On this day we learn about ancestral history through stories and tribal dances. Many families partake in the arts by drawing or painting pictures, molding clay sculptures, singing and dancing, or planting seedlings. The last day of Kwanzaa is when the last green candle will burn. It is the day of the last principle Imani (ee-mahn-ee) meaning Faith. On this final day of observance we gather for a huge banquet known as karamu (kaa-rah-moo). To begin the feast, an Elder spills a few droplets of water from the family cup of unity or kikombe cha umoja (kee-kombay cha oo-moe-jah). Each droplet is a gesture of recognition to our African ancestors. Afterwards, the kikombe cha umoja (kee-kom-bay cha oo-moe-jah) is passed to each family member to take a drink

6 from, the food is blessed and the feasting begins. After dinner the house is filled with the harmonic sounds of singing, dancing, hand clapping and shouting. A different Kwanzaa gift is given on each day. Kwanzaa gifts are hand-made and called zawadi (zah-wah-dee). Some gifts are given as rewards to children. Children give gifts too. Kwanzaa gifts range from paintings to necklaces, dolls to storybooks, anything made by your hands with love. Kwanzaa Favorites African Vegetable Stew 1 Onion (very large) chopped 1 Swiss chard bunch 1 can Garbanzo beans (Known also as chick-peas) 1/2 c Raisins 1/2 c Rice, raw 2 Yams Several fresh tomatoes (Or one large can) 1 Garlic clove Salt and pepper, to taste Tabasco sauce, to taste Fry onion, garlic and white stems of chard until barely limp. Add chopped greens and fry a bit. Either peel the yams or scrub them well with a vegetable brush, then slice them into thick slices. Add garbanzos, raisins, yams, tomatoes, salt and pepper. Cook a couple of minutes. Make a well in the center of the mixture in the pot. Put the rice in the well and pat it down until it's wet. Cover and cook until rice is done, about 25 minutes. Add Tabasco sauce to taste. Yield: 4 servings Benne Cakes Note: You will need oil to grease a cookie sheet. 1-cup finely packed brown sugar 1/4-cup butter or margarine, softened 1 egg, beaten 1/2-teaspoon vanilla extract 1 teaspoon freshly squeezed lemon juice 1/2-cup all-purpose flour 1/2-teaspoon baking powder 1/4-teaspoon salt 1 cup toasted sesame seeds Preheat the oven to 325. Lightly oil a cookie sheet. Mix together the brown sugar and butter, and beat until they are creamy. Stir in the egg, vanilla extract, and lemon juice. Add flour, baking powder, salt, and sesame seeds. Drop by rounded teaspoons onto the cookie sheet 2 inches apart, bake for 15 minutes or until the edges are browned. Enjoy! Benne cakes are a food from West Africa. Benne means sesame seeds. The sesame seeds are eaten for good luck. This treat is still eaten in some parts of the American South. Recipe by HarperCollins Other Holiday Favorites Chocolate Cherry Biscotti 2 1/2 cups flour 1/4 cup unsweetened cocoa powder 1 tablespoon baking powder 1 cup sugar 3 beaten 1 teaspoon vanilla 1 tablespoon Kirsch 1/8 teaspoon salt 1 cup chocolate chips 1/4 cup butter 1 cup almonds, coarsely chopped 1 cup dried cherries or cranberries Preheat oven to 350F. Melt chocolate chips and butter together in the microwave or in a

7 double boiler over low heat. Line two baking sheets with parchment paper or a baking liner. In a bowl, combine flour, cocoa, and baking powder. Stir well. In another large bowl, combine sugar, eggs, vanilla, Kirsch, and salt; stir in chocolate and butter until well blended. With a wooden spoon, mix in almonds and cherries or cranberries. Fold in flour mixture and mix well. Dough will be stiff. Divide dough in half. Working directly on prepared cookie sheets, shape each half into a log shape measuring about 2 1/2" wide by 15" long. Place a log on each baking sheet. Bake for 35 minutes, or until a toothpick inserted in center comes out clean. Alternate position of baking sheets after half the time. Cool logs and baking sheets on wire racks, and then transfer them to a cutting board. Cut each log into diagonal 1/3" to 1/2" thick slices with a serrated knife. Lay slices on baking sheets and bake 10 minutes. Turn slices over and bake 10 minutes more, until crisp and dry. Cool on baking sheets. These events consisted of a gospel play in March 2002, which was called God of A Second Chance. This play touched many lives in many ways; dealing with some of the many facets of drugs and there relations. Our next play Show me your

8 wounds-i ll show you my scars John 20:25-29 will take place at the Old Dunbar Community Center located in Forest City, NC. The date of this performance is scheduled for Sat. December 28 th at 6pm. The Community Empowerment Project, CDC along with Word of Deliverance Christian Assembly has sponsored a Thanksgiving Dinner for those who were in need for 2 years in a row. We have had a great success rate feeding approximately 75 needy families this year, and people in need of a meal. We look forward to the upcoming year with hopes of a greater turn out.
