The birdhouses will be judged soon and the winners will be announced in the April 4-H Newsletter. Good luck to all the participants!

3 Choctaw County 4-H News Mardi Gras Page 3 4-H ers at SCA and PA learned the history and significance of Mardi Gras during the February Club Meeting. They made colorful masks to better grasp the understanding of Mardi Gras.

4 Choctaw County 4-H News Parfaits as Healthy Snacks Page 4 4-H ers from CCES and PA learned how to make delicious healthy snacks during a recent 4-H meeting. Mrs. Miller taught the students how to make parfaits using fruit, yogurt, and granola. Everyone enjoyed the lesson and especially enjoyed being able to sample their work.

Students not only celebrated and received a day off for president s day, but in February 4-H ers were able to discuss some important facts about our U.S. Presidents, past and present. Citizenship is an important part of youth development! Our young people have the opportunity to learn how to make an impact within their clubs, as well as in the communities in which they live. The youth also participated in hands-on learning by demonstrating how to properly fold a U.S. Flag and reviewed some of the Do s and Don ts of care for the flag. These skills, along with the other 4-H programs each month are preparing these youth to be our leaders in the 4-H club, the community or beyond. These youth are learning and demonstrating skills that will last a lifetime!

7 The World I See A Creative Arts Project Photography is a great hobby. It helps you express yourself. It can also be a great way to earn money. The World I See Lets You: Be Creative. Take great photos. Be an artist. What You Will Learn: The basics of good photography. Photographic composition and techniques. To develop skills that will be useful in a variety of careers The Guidelines: Photos may be in color, black-and-white or sepia. Prints must be 5 x7 or larger. They should be no larger than 18 x18. You may use a film or digital camera. Do you need to lighten your photo or fix the color? You may make small changes using your computer or darkroom. Do not submit photos in frames or with cutout boards. Photos should be simply mounted flat on plain white or black poster board or foam board. Mount board size may be no larger than 20 x20. Your name, birthdate, county, and address must be on the back of photo. Do not include titles or other information on the front of the mount board. One photo per participant. Photos must have been taken by the youth submitting the entry. Photos must have been taken during current 4-H year. Photos will be laid flat on a table for judging. Use no easels or props. You must accompany your photograph to the competition. Be ready to talk about your work. 8 Choctaw County 4-H News 4-H H Club Reports Page 8 SCA 5th By: Mali Lolley In our February 4-H meeting, we began by saying our pledges and singing a few songs. We talked about Mardi Gras and learned a lot of things that we didn't know about it. The fun part was when we made masks and got beads! We turned in our Extreme birdhouses and talked about future activities. Mrs. Jennifer told us all about the fun activities at summer camp in June. In our March meeting, we will turn in our dairy contest posters. We had a great time learning more about the true meaning of Mardi Gras. Recipe of the Month Happy Lepre-cones Ingredients 4 scoops vanilla ice cream 1 cup shredded coconut Yellow and red food coloring Zippered baggie 1 cup white frosting Pastry bag small, circle decorating tip 4 green ice-cream cones 4 flower-shaped candies for hat buckle 8 large, green cake sprinkles for the eyes 1 red licorice wheel cut into 1-in. pieces for the mouth SCA 6th By: Baylee Owen Our February meeting was cool. After we talked about the events coming up and went over the newsletter, we learned about Mardi Gras. It turns out that Mardi Gras is actually a religious holiday. Also the word Mardi Gras is French for Fat Tuesday. After Mrs. Jennifer was done talking, we made masks with feathers, sequins, and beads. We got beads to hang around our neck also. This February meeting was great! Directions 1. An hour before assembling leprechauns, scoop out 4 round icecream balls and place them on a baking sheet. Put them back in the freezer for an hour. 2. While ice cream is in freezer, tint coconut. Pour shredded coconut into a zippered baggie and add 2 drops red and 3 drops yellow food coloring. Shake and mix until the coconut is a nice orange color. Then pour coconut into a shallow bowl and set aside. 3. Scoop frosting into a bowl and tint frosting with the same amount of red and yellow food coloring as the coconut. Add tinted frosting to a pastry bag fitted with a small, circle decorating tip. 4. To make hats, carefully pipe a line of frosting around each icecream cone to form the hatbands. Add a flower-shaped candy to each hatband. Set aside. 5. After ice cream has firmed up, roll one half of each scoop quickly in the tinted coconut and place on a serving platter, coconut-side down. On the uncovered side of each ice-cream scoop, place 2 large, green sprinkles for eyes and snips of the red licorice wheel for a mouth. Top each with a cone hat. Serve immediately or place serving platter in freezer until ready to serve. Makes 4 cones
