2 H anukkah, the "Festival of Lights," starts on the 12th day of the Jewish calendar month of Kislev and lasts for eight days and nights. In 2017, Hanukkah begins at sundown on December 12th with blessings, games, and festive foods, Hanukkah celebrates the triumphs--both religious and military--of ancient Jewish heroes. Hanukkah is a relatively minor holiday in the Jewish year. In Canada and the United States, however, its Hanukkah -The Political Festival Ad... of Lights... closeness to Christmas has brought greater attention to Hanukkah and its gift-giving tradition. Amid the ever-growing flood of Christmas advertising, it may seem especially fitting that the Hanukkah story tells of Jewish culture surviving in a non-jewish world. The Hanukkah Story... Jews observe a holiday for eight days in honour of the historic victory of the Maccabees and the miracle of the oil. Nearly 2,200 years ago, the Greek-Syrian ruler Antiochus IV tried to force Greek culture upon peoples in his territory. Jews in Judea - now Israelwere forbidden their most important religious practices as well as study of the Torah. Although vastly outnumbered, religious Jews in the region took up arms to protect their community and their religion. Led by Mattathias the Hasmonean, and later his son Judah the Maccabee, the rebel armies became known as the Maccabees. After three years of fighting, in the year 3597, or about 165 B.C.E., the Maccabees victoriously reclaimed the temple on Jerusalem's Mount Moriah. Next they prepared the temple for rededication -- in Hebrew, Hanukkah means "dedication." In the temple they found only enough purified oil to kindle the temple light for a single day. But miraculously, the light continued to burn for eight days. The Menorah... The lighting of the menorah, known in Hebrew as the hanukiya, is the most important Hanukkah tradition. A menorah is a candlestand with nine branches. Usually eight candles - one for each day of Hanukka - are of the same height, with a taller one in the middle, the shamash ("servant"), which is used to light the others. Each evening of Hanukkah, one more candle is lit, with a special blessing. The menorah symbolizes the burning light in the temple, as well as marking the eight days of the Hanukkah festival. Some say it also celebrates the light of freedom won by the Maccabees for the Jewish people. Page 2

18 1 Arrange the lights on the menorah. Ensure that there is enough oil, or that the candles are big enough, for the lights to burn until half an hour after nightfall (or, if lighting after nightfall, for one half hour). On the first night, set one candle to the far right of the menorah. On the following night, add a second light to the left of the first one, and then add one light each night of Chanukah - moving from right to left. 2 Gather everyone in the house around the menorah. Light the Menorah 3 Light the shamash candle. Then hold it in your right hand (unless you are lefthanded). 4 While standing, recite the appropriate blessings. (on next page) 5 Light the candles. Each night, light the newest (left -most) candle first and continue lighting from left to right. (We add lights to the menorah from right to left, while we light from left to right.) Keep on increasing each night, until you've got all eight candles lit. The lighting of the Chanukiah is done at home, at dusk or when the family has gathered. Some people put the Chanukiah in the window for the purpose of "publicizing the miracle." In many synagogues, special prayers of thanksgiving are added to the services, and a special Chanukah paragraph is added to the Birkat HaMazon - the blessing after the meal. 32 Hanukkah Fun & Food... The Dreidel... Long a favorite Hanukkah toy, the dreidel once had a serious purpose. When the Syrians forbid study of the Torah, Jews who studied in secret kept spinning tops "sivivons, or dreidels"on hand. This way, if they were found studying, they could quickly pretend that they had only been playing. Outside of Israel, a dreidel has the Hebrew letters "nun," "gimel," "hay," and "shin" on its four sides. These letters stand for "Nes gadol haya sham," which means, "A great miracle happened there," referring to Israel. An Israeli dreidel has the letter "pay" rather than "shin." This stands for "poh," meaning "here"a great miracle happened here." month before the start of Hanukkah. Hanukkah food is sufganiyot, a kind of jelly donut cooked in oil. Israelis eat sufganiyot for more than a Eating dairy products, especially cheese, is another Hanukkah tradition. This is done in memory of the Jewish heroine Judith, who according to legend saved her village from Syrian attackers. Judith fed wine and cheese to the Syrian general Holofernes until he became so drunk that he fell to the ground. She then seized his sword and cut off his head, which she brought back to her village in a basket. The next morning, Syrian troops found the headless body of their leader and fled in terror. The Hebrew letters also represent Yiddish words that tell how to play the dreidel game. Each player starts with the same amount of candies, chocolate coins (gelt), or other tokens, and puts one in a pot. Players take turns spinning the dreidel, waiting to see which letter lands face up. Nun is for "nisht," do nothing. Gimel is for "gants," take the whole pot. Hay is for "halb," take half. Shin is for "shtel," add to the pot. The game ends when a single player wins all the tokens. Hanukkah Foods Many traditional Hanukkah foods are cooked in oil, in remembrance of the oil that burned in the temple. In the United States, the most widespread Hanukkah food is latkes, or potato pancakes, a custom that may have developed in Eastern Europe. In Israel, the favorite Page 32

41 All I Want for Chanukah are Latkes! By Gail Estrin Potato & Veggie & Cheese Oy Veh! Who says you can t have them all! I like to treat my Chanukah guests to a latke bar so everyone can sample what they like. I cook traditional potato latkes, some sweet potato ones, zucchini & carrot latkes, and cheese latkes with feta, spinach and more. Of course the common ingredients are always matzah meal, garlic and onions. The Dips What are latkes without the dips! I serve many dips and sauces on the side in colourful bowls. Potatoes latkes are always heavenly with applesauce and sour cream. Applesauce s also come in many flavours like mango-apple, cran-apple and pear apple. I serve them all. Sweet potato latkes go great with an avocado dip. I usually pair up zucchini and cheese latkes with hummus dips like Mediterranean and pine nut as well as a nice Russian red pepper dip. Ingredients for traditional potato latkes. I always like to share so on the next few pages, are my recipes for Traditional Potato Latkes, Sweet Potato Latkes, Zucchini Latkes and Cheese Latkes Happy Chanukah & ENJOY! 42 All I Want for Chanukah are Latkes! By Gail Estrin Gail s Best Potato Latkes Ever! Latkes are a traditional holiday dish served during the Jewish festival of Chanukah. But, I also make them all year long. I learned how to make my potato latkes from many sources. Since I had no Jewish Bubee to guide and impart all her wisdom on, I adopted and adapted from family, friends and neighbours. This is now my special family latke recipe from every tried and true source on the planet. It is filled with borrowed memories, long forgotten tips, many happy occasions, Irish potato cooking tips from my great Gran, and best of all - my new family traditions. MAKES: about 28 potato pancakes, 2-3 inches each 2 pounds of any kind of potatoes, peeled, quartered and placed in a bowl of cold water 1 whole small onion (quartered) 2 cloves of garlic (crushed) 2 eggs, lightly beaten (1 egg per pound of potatoes)* ½ cup all-purpose flour¼ cup matzah meal**1 teaspoon salt2 teaspoons of fresh or ground parsley Freshly ground black pepper to taste Canola oil for frying Line a large baking sheet, oven proof casserole (to go in the oven) or (small aluminum baking pans if freezing them) with paper towels. If not serving the latkes immediately out of the frying pan into the dining room preheat the oven to 200 degrees. Peel the potatoes & place them in the bowl of cold water. Quarter the potatoes & onions and shred them together (if using a processor) or potato first, then onion (if grating by hand). The potatoes won t turn black this way (great Gran was right!) Grate them into large colander (if by hand). Crunchy Zucchini & Carrot Latkes MAKES: 8 latkes (Double the recipe for 4 and triple the recipe for 6 or more guests) 2 medium sized zucchini 1 tsp ( 5 ml) kosher salt 2 carrots, peeled 1/2 medium-size onion 1 garlic clove, minced 2 tbsp (30 ml) chopped or dried parsley 1 egg, beaten 1/2 cup (125 ml) all-purpose flour 1 box of potato pancake latkes mix (either Streit s or Manischewitz) 1/4 tsp (1 ml) each of salt and black pepper 2 tbsp (30 ml) canola oil Grate zucchini (either by hand or using a food processor) and place in a colander over sink. Then stir in 1 tsp (5 ml) kosher salt and let drain. You can press gently with a wooden spoon to get all the moisture out.meanwhile, grate carrots and onion into a bowl. (either by hand or food processor) Stir in minced garlic, parsley and egg. When zucchini has drained for 15 minutes, scoop up handfuls. Squeeze out all liquid and then stir into the carrot mixture. Mix the flour with salt and pepper and parsley. Stir into carrot mixture. Heat 1 tbsp (15 ml) oil in a large frying pan set over medium to medium high heat. Fill a 1/4 cup (50 ml) round measure with latke mixture and carefully turn into hot oil. TIP: I wear oven mitts to prevent the oil from splattering on my wrists and hands. With a wooden spoon, spread into a 3-inch (8-cm) round latkes with uneven edges. Repeat process, adding 3 more latkes to pan. Sauté until golden, turning once, from 1 to 2 minutes per side. These cook up fast so make sure to keep an eye on them at all times. Repeat with remaining oil and latke mixture. NOTE: You may find that you need to add more oil, depending on what kind of frying pan you use so make keep the oil handy. Remove from the frying pan to a large tin foil pan lined with a sheet of paper towel to drain off the oil. Keep layering the pan with a sheet of paper towel between the latke layers. Just before serving remove all the paper towels and warm up in the oven for 15 minutes at 350. Transfer to a serving plater and enjoy! Page 42

By Gail Estrin Sweet Potato Latkes MAKES: pancakes 2 lbs sweet potatoes or yams 1 box of Manischewitz Sweetened Potato Pancake Mix 2 eggs 1 medium-size onion 1 garlic clove, minced 1-2 teaspoons cinnamon (to taste) 1/4 teaspoon nutmeg canola oil for frying Peel and grate sweet potatoes and put them in a collander in the sink to drain. Remove any excess moisture by pressing into the collander with a wooden spoon. In a large bowl, beat eggs and add one at a time, mixing well. Add the package of sweetened potato pancake mix and the spices and mix well. Heat oil until hot and drop a large wooden spoonful in the pan until you have no space left. Cook until brown and flip. Cook until brown again. Place cooked latkes in a pan lined with paper towel. Keep layering with paper towel until all done. Serve immediately or re-heat at 350 for 10 minutes, removing the paper towels before placing in the oven. Enjoy with your favourite topping. Yummy Cheese Latkes MAKES: latkes 2 potatoes 1 small container of dry cottage cheese, or dry feta 2 eggs 1 box of Manischewitz Garlic and Rosemary Potato Pancake Mix 10 oz of frozen or fresh cooked spinach, well drained & chopped 1/2 teaspoon ground peppercorns 2 garlic cloves, minced canola oil Peel, cube, and boil potatoes. Mash. Add cheese. Beat eggs well and add. Add package of garlic and rosemary potato pancake mix, and spices. Heat oil until hot and put large wooden spoonful for each pancake. Cook until brown and flip. Place cooked latkes in a pan lined with paper towel. Keep layering with paper towel until all done. Serve immediately or re-heat at 350 for 10 minutes, removing the paper towels before placing in the oven. Enjoy with your favourite topping. How To Make A Latke Bar Dress your Chanukah table with dreidels and chocolate coins (called gelt) and all your favourite Chanukah decorations. Heat up all the different latkes and arrange on separate platters and label each with a place card. Place all the dips and sauces in bowls and label each with a place card as well. I usually make an awesome coleslaw with a poppy seed dressing and a caeser salad. Add a mimosa punch with crushed ice and pour into wine glasses. Voila A Chanukah meal that you and your guests will really enjoy! Page 43

45 CHANUKAH IN A NUTSHELL The Miracle of the First Night By Naftali Silberberg Certain facts are taken for granted. At times, however, a little thought raises real questions regarding the logic behind these concepts which are simply accepted at face value. For example: Chanukah is eight days long because the oil which would naturally have fueled the menorah for only one day miraculously lasted for eight. Everyone knows this since their days in Hebrew school. But does this make sense? If there was sufficient oil to burn for one day, then the miracle lasted only seven days. Why celebrate the first day, if nothing miraculous occurred then? This question has long bothered Jewish scholars, and many, many answers have been suggested (click here for a short article on the topic). Most of these answers demonstrate how there was indeed some sort of miracle on the first day of Chanukah too. Perhaps, however, it is unnecessary to establish the occurrence of any miracle on the first day of Chanukah in order to justify its inclusion in the holiday. Perhaps we are celebrating the oil itself, which very naturally fueled the menorah on that day. An interesting episode recounted in the Talmud 1 will illuminate the matter: The Mishnaic sage Rabbi Chanina ben Dosa was a renowned miracleworker. Shortly after sunset one Friday evening, he noticed his daughter sobbing. Upon asking her the reason for her distress, she explained that she had mistakenly lit the Shabbat candles with vinegar instead of oil. Rabbi Chanina comforted his daughter: Do not be troubled, my dear. The One who commanded oil to burn will command vinegar to burn... Needless to say, the candles did not go out. In fact, they burned until the following night, when the havdalah candle (which accompanies the Saturday night ceremony signaling the end of the Shabbat) was kindled from their flames! In the eyes of this holy sage, vinegar burning was no more spectacular than oil burning This story is so striking and unique because Rabbi Chanina didn t respond by saying, Wanna see something amazing? Watch this miracle! Rather, in the eyes of this holy sage, vinegar burning was no more spectacular than oil burning. The only difference between the two was how frequently they occur. If the definition of miracle is G_dly intervention in personal or national affairs, then every phenomenon is miraculous for everything that occurs is a direct result of G_d s command. The Guardian of Israel never slumbers nor sleeps, but His watchful eye can and usually does express itself in natural means. Nature is merely the curtain which conceals the grand Puppeteer from our sight. TORAH GEMS Miracle in the Wilderness Miracles are only convincing to those who witnessed them; whilst coming generations, who know them only from the account given by others, may consider them as untrue. But miracles cannot continue and last for all generations; it is even inconceivable that they should be permanent. Now the greatest of the miracles described in the Law is the stay of the Israelites in the wilderness for forty years, with a daily supply of manna. This wilderness, as described in Scripture, consisted of places "wherein were fiery serpants and scorpians, and drought, where there was no water." (Deut. viii. 15); places very remote from cultivated land, and naturally not adapted for the habitation of man, "It is no place of seed, or of figs, or of vines, or of pomegranates, neither is there any water to drink" (Num. xx. 5). "A land that no man passed through, and where no man dwelt" (Jer. ii. 6). In reference to the story of the Israelites in the wilderness, Scripture relates, "Ye have not eaten bread, neither have ye drank wine or strong drink" (Deut. xix. 5). All these miracles were wonderful, public, and witnessed by the people. But God knew that in future people might doubt the correctness of the account of those miracles, in the same manner as they doubt the accuracy of other narratives; they might think that the Israelites stayed in the wilderness in a place not far from inhabited land, where it was possible for man to live in the ordinary way; that it was like those deserts in which Arabs live at present; or that they dwelt in such places in which they could plow, sow, and reap, or live on some vegetable that was growing there; or that manna came always down in those places as an ordinary natural product; or that there were wells of water in those places. In order to remove all those doubts and to firmly establish the accuracy of the account of these miracles, Scripture enumerates all the stations, so that coming generations may see them, and learn the greatness of the miracle which enabled human beings to live in those places forty years.
