4 2. General TM PURISCOPE NG is a system for instant hygiene control in the food and beverage industry. The system consits of 3 components: a highly sensitive photometer to measure the hygiene, the reagent TM DESANA MAX and a smartphone app (ios / Android) to calculate the results and manage data. TM DESANA MAX, the indicator/cleaner with colour-change technology can be ordered from THONHAUSER or its distribution partners ( us at cleaning@thonhauser.net, call or go to / contact / worldwide partners to get a list of international distributors). Always wear the proper protective equipment when handling TM DESANA MAX (normal glasses are not considered to be adequate protection because they don t close on the sides). Read this application guideline carefully before starting operation of TM PURISCOPE NG and TM DESANA MAX. Please carefully observe usual precautions for handling chemicals. People under the age of 16 may not handle TM PURISCOPE NG photometer and TM DESANA MAX. TM PURISCOPE NG photometer is protected against splash water. However don t put the entire unit (except the measuring tube) under water. 2.1 intended area of application TM PURISCOPE NG photometer is programmed to measure the PST-value inside lines of beverage dispensing systems as well as of all beverage-carrying surfaces in taps and couplers. It may only be used in combination with TM DESANA MAX solutions which are mixed according to the instructions on the pouch. False applications include: Non-diluted mixtures, flamable liquids, using it as a tool, applying it at temperatures >40 C, etc. 4

Phone: cleaning@thonhauser.net. 2.3 Indicator reagent To measure the PST value in beverage dispensing systems always and only use a TM DESANA MAX solution. TM DESANA MAX, the indicator/cleaner with colour-change technology can be ordered from THONHAUSER or its distribution partners ( us at cleaning@thonhauser.net, call or go to / contact / worldwide partners to get a list of international distributors). 5
6 3. Hygiene Verification TM PURISCOPE NG helps you to verify the level of hygiene inside the lines, taps and couplers of beverage dispensing systems What is PST? Persulphate Technology, or PST gives an instant answer to the question, how clean is my system inside?. The patented chemical principle utilizes a PURPLE indicating cleaning solution (TM DESANA MAX) that changes its colour to GREEN and YELLOW when contacting organic material. That happens in parallel action with an oxidation and mineralization of the organic residue. The colour change can be measured with various photometric tools, such as TM PURISCOPE NG, thus providing REAL TIME feedback about the hygienic status of the WHOLE inside surface of the dispensing system. So the PST-value, which is measured with the TM PURISCOPE NG photometer, is an absolute value and indicates how much total organic material was present inside the entire volume of the lines. To put the PST-value in relation to the inner surface of the tubes, where the organic material was actually dissolved from, the TM PU- RISCOPE NG app incorporates the various tubing diameters and calculates the PST-surface value. If the lines are heavily contaminated and the TM DESANA MAX solution comes out green or yellow, the maximum PST SURFACE VALUE of 0.02 is exceeded. 6
7 3.2. Verification of lines When verifying the hygienic status inside the lines of a beverage dispensing system, follow these basic steps: Push out the beverage completely with clear water. Prepare a fresh TM DESANA MAX solution in a clean cleaning pot or bucket according to instruction on the pouch. By holding the measuring tube of the TM PURISCOPE NG photometer into the fresh solution and following the steps described in 4.2, measure the colour of the blank unsoiled solution (that s your baseline ). Now fill the lines with TM DESANA MAX solution and close the tap AS SOON AS you see coloured solution coming out, no matter what colour. Set the timer to 5 minutes dwell time. Meanwhile prepare for a water rinse Push the entire TM DESANA MAX solution out with water (!) and collect it in a CLEAN container/bucket - don t push it out with TM DESANA MAX solution, this would falsify the result of the verification. Hold the measuring tube of the TM PURISCOPE NG photometer into this sample to measure its colour. The result is shown as PST value on the screen. Check that the ph value of last rinsing water is down to ph 7 before hooking on the beverage again or continue cleaning the lines. Use the TM PURISCOPE NG app to calculate the PST SUR- FACE VALUE from the PST VALUE which is shown on the screen of the TM PURISCOPE NG photometer. Enter all customer relevant information into the app and create reports showing the hygiene development over time. TM puriscope NG Input Locations Manual Analysis Settings 7
8 3.3. Verification of couplers and taps When verifying the hygienic status inside couplers and taps, follow these basic steps: Rinse off any beverage residues from the inside of the coupler and tap with tap water, using a suringe, tap ball or other devices. Don t use a brush! Prepare a fresh TM DESANA MAX solution in a clean bucket according to instruction on the pouch. Fill some of the solution into the test tubes provided in the TM PURISCOPE NG kit. By holding the measuring tube of the TM PURISCOPE NG photometer into the fresh solution and following the steps described in 4.2, measure the colour of the blank unsoiled solution (that s your baseline ). Now wetten the swab provided in the TM PURISCOPE NG kit with sterilized water. Then swab the inside of the coupler or tap. Without touching the top of the swab or placing it on potentially soiled surfaces, put the swab inside the test tube filled with TM DESANA MAX solution. No need to dismantle the coupler or tap for this operation. Allow a dwell time of 5 minutes. After 5 minutes, hold the measuring tube of the TM PURI- SCOPE NG photometer into the test tube to measure its colour. The result is shown as PST value on the screen. 8
9 Use the TM PURISCOPE NG app to calculate the PST SUR- FACE VALUE from the PST VALUE which is shown on the screen of the TM PURISCOPE NG photometer. Enter all customer relevant information into the app and create reports showing the hygiene development over time. 10 4. Application of the photometer 4.1 battery Use a coin to open the protective lid of the battery slot. After taking out the battery which comes with the TM PURI- SCOPE NG case out of its protetive cover, insert it into the battery slot of the photometer. Make sure the +pole shows to the top (facing towards the cover of the slot). Please observe that the battery should be placed underneath both pins of the +pole (see picture). The pins may not be recurved. Now push the battery into the slot until it clicks (don t use any metal tools!) and close the lid. Make sure that the plastic seal is correctly placed inside the furrow of the battery slot to avoid water entering and destroying the electronics of the photometer. Now turn the photometer and push the OK button. The display shows the following message: Battery inserted correctly. If the display doesn t show any message, the battery is not inserted correctly or the battery is discharged. If the battery is close to being discharged you may read: Battery low, please change. Only use type CR 2032 batteries, other types may cause errors. 10
11 4.2 application Use the left OK button to turn the photometer on and off. Use the right Select botton to select the verification mode using TM DESANA MAX. Push the OK button again to confirm your selection. Now the photometer may indicate the needed lengh of the measuring tube. If you see the message Please extend measuring tube carefully pull out the measuring tube until it clicks. Don t pull it out too far - this would destroy the unit. 11
12 When the message Please slide in the measuring tube shows, push it in manually and carefully until stop. Be careful that no solid material enters the opening of the measuring tube. This could damage the optical mechanics When the measuring tube is positioned correctly, the message please measure control sample shows. Push the OK button to start the measuring of the base line = blank solution. After about 3 seconds the display shows the message: PLEASE WAIT PLEASE MEASURE SAMPLE. Push the OK button to start measuring the sample solution. After about 3 seconds the display shows the result of the verification (in PST VALUE units). 12
13 4.3 cleaning after each measurement After each measurement you should rinse the measuring tube thoroughly with distilled water. In addition, the lense inside the measuring tube can carefully be cleaned with a clean cloth or cotton bud. Don t remove or take appart any components of the photometer for cleaning. Insert the cotton bud into the gaps on the side of the measuring tube and rub off the lense without applying pressure. 4.4 Turn off the photometer Push the OK botton longer than 3 seconds to turn off the photometer. All measurements get lost when the unit is turned off. Automatic sleep mode If the unit is not used for longer than 6 minutes it shuts off automatically. All measurements get lost when the unit is turned off. 13

Repairs should only be done by Thonhauser. Please observe that when handling without authorisation, Thonhauser can t guarantee full warranty of the photometer and Thonhauser could charge you for repair or service. 4.6 cleaning Clean the TM PURISCOPE NG photometer with a tissue cloth or cotton bud and water. Never use acid or corrosive household detergents or solvents; these could destroy the photometer. Pay attention, that the measuring lense is clear at all times. Any debris or residues could result in measurement faults. 14
15 4.7 disposal The TM PURISCOPE NG photometer and its battery may not be disposed off with regular household waste. TM PURISCOPE NG is an electronic tool. To dispose it feel free to return it to Thonhauser GmbH or to a local electronic shop. Also the co-packed batteries may be returned to Thonhauser GmbH or disposed off at your local special waste collection. Make sure to dispose batteries only after they are discharged or take measures to prevent a short-circuit, e.g. by covering both poses with adhesive tape. 15
16 5. Application of the app The TM PURISCOPE NG app for smartphones helps you to manage and archive data. Furthermore it converts the PST VALUE readouts from the photometer into a PST SURFACE VALUE which puts the measurements in relation to the inner surface of the tubes (select from various preset tubing diameters). The app is available to download for free on Apple itunes and Google playstore. Available operating languages are German and English and are automatically set according to the general language settings on your phone (English is chosen for all language settings other than German). 5.1 The menu After you downloaded and installed the TM PURISCOPE NG app, you can choose from 5 sub-menus: Input: Choose this selection to enter the PST values measured by the photometer. Locations: Manage main data about measuring points and client locations where you perform the hygiene verifications. Analyses: Export selected measurements. Settings: Pre-set default settings, define custom measurement options and select/de-select automatic geolocation via GPS-tracking. Manual: Link to with instructions about how to perform a hygiene verification. 16
17 5.2 Locations: Define measuring points Choose LOCATIONS from the main menu. Tap ADD CLIENT to type in the name of your client or the location of the hygiene verification. After taping SAVE you return to client selection. Choose from all entered clients and allocate a measuring point by taping MEASURING POINTS from the pop-up menu, then ADD MEASURING POINT. Fill in the options as follows: Name: Name that helps you identify the respective location, e.g. Indian Pale Ale Number: Assign a specific identification number to each checkpoint or scan an available barcode. Method: Select from either DISPENSING EQUIPMENT or SURFACE VOLUME. See instructions below for further information. Diameter: Select the tubing diameter closest to the majority of the lines at hand. Limits: Define the maximum PST SURFACE VALUE set for the verified line. If a higher value is entered, the result would show as inadequte or not OK. Example for maximum PST SURFACE VALUES in beverage dispensing systems with 7mm diameter: OK: up to 0.02 PST-SURFACE-VALUE Not OK: above 0.02 PST-SURFACE-VALUE Therefore type in 0 PST surface volume as START LIMIT and 0.02 PST surface volume (or a value inbetween 0 and 0.02) as END LIMIT. 17
18 Sample solutions with more than 0.02 PST surface volume are too contaminated to be measured accurately by TM PURISCOPE NG photometer. By taping SAVE you have completed the creation of a measuring point. Tap BACK to return to the main menu. 5.3 INPUT: enter measurements To archive the data measured with the TM PURISCOPE NG photometer, tap INPUT and then ADD NEW MEASURE- MENT. Client: Choose from a client or location previously entered. Measuring point: Choose from a measuring point previously entered. Method: Once you defined a method (e.g. dispensing systems verification) for a certain measuring point, this method will appear automatically in the list. Colour table: If you don t want to work with the TM PURI- SCOPE NG photometer you can compare the colour of the test solution with this colour table and memorise the respecitve colour. Measured Value: Enter the PST value measured by the photometer (e.g. 0.1 ). Result: The app calculates the PST SURFACE VALUE from the entered measured value and shows the respective interpretation of the result. Notes: Enter notes as required (optional). Add Custom Measure: Here, you may enter other parameters, such as temperature of the beverage, gas pressure etc. Go to SETTINGS to set any measurement parameters required. 18
19 Take photo: Option to take a picture and asign it to a specific verification. By taping on SAVE you have completed the data input. Option: Geolocation Go to SETTINGS in the main menu and switch GPS TRA- CKING to ON. Now the app automatically tracks the position of your actual location and asigns the geo-data to your verification. To opt out GPS tracking, tap on SAVE WITHOUT GEOLO- CATION. Now your entries will be safed without your current location. 19
20 5.4 ANALYSES: export data To send the archived measurements via , tap ANALYSES and select from the list of clients. The app will create a csv-data file and open a blank . Note: You need an -app and network connection to send s from your smart phone. Chose a customer from your register. All entered checkpoints will show in the list. When taping SEND DATA you can either send all data from a certain client or just the measurements from a filtered time period. The app then automatically creates a csv-file as well as a graphfrom all entered measurements and opens an for you to send the file SETTINGS In the SETTINGS menu, set certain pre-settings, create further measurement parameters and select automatic tracking of geodata via GPS. Name: Enter a name that will appear in the recipients when you send a report, e.g. your company name. Enter the -address from which you want to send all reports. GPS-tracking: turn automatic geo-tracking on/off. Verifcation method: Define a default verification method and most common line diameter. E.g. Dispensing equipment, 10mm. 20
21 6. Guarantee TM PURISCOPE NG photometer has a warranty of 2 years from date of purchase. Please add the invoice to the return shipment of your damaged photometer. Please observe that in case you open the photometer or manipulate the electronics we cannot hold the warranty. Each unit is tested and approved before shipping. TM PURISCOPE NG app will be updated on a regular basis, users will be notified of these updates by itunes or Google Playstore. Each user is responsible to download and install those updates in order to ensure ongoing system compatibility with their smartphones. 21
