1 OPERATON T stp an peratin at any time Press and hld the Start Key until the cntrl beeps fr tw secnds, indicating the peratin has been cancelled. The ven will remain in a pwer-n state. T turn ven cntrl panel ff Press and hld the On/Off Key until the ven beeps. The On/Off indicatr light will g ut. Dr pen indicatr Display will flash dr and a triple beep will alert the user. Press On/Off key t acknwledge errr and disable triple beep. Arrw Keys: Ck, Hld and Prbe Temperature, and the Time setting can be adjusted by pressing the Arrw keys. Pressing and releasing the Arrw key will increase settings in increments f ne. T change a setting mre rapidly, press and hld the Arrw key. Once the setting reaches a number divisible by 10, it will begin t increase in increments f 10. Green and Amber ndicatrs: Each prgram key includes a green light which indicates a requirement fr additinal prgramming by the peratr r the current peratinal state f the ven. The Ck, Time, Prb e, and Hld keys include an amber indicatr light t identify the infrmatin being displayed. Pwer Fail Detect: f the pwer were t fail fr any reasn while heating, the cntrl will retain, in memry, the prgrammed perating cnditins. When pwer is restred, the cntrl will resume perating frm the pint where it was interrupted and the On/Off indicatr light will flash, indicating that such an event did ccur. The peratr can acknwledge the pwer failure by pressing the On/Off key. Pressing the key will display the amunt f time that the pwer has been ff. The cntrl will stp cunting the amunt f time the pwer has been ff when it has been ff fr mre than 24 hurs. NOTE: f such an event has ccurred, it is strngly recmmended that yu ensure the fd is safe fr cnsumptin accrding t lcal health regulatins. Display High/Lw Prbe Temperatures: T bserve the recrded maximum r minimum prbe temperature when cking by prbe, press the fllwing keys while the prbe remains in the prduct: Highest Temperature: Press Prbe Key and Up Arrw Key at same time. T use the prbe fr cking remve it frm the bracket and wipe the full length f the metal prbe with a dispsable alchl pad t clean and sanitize befre using. Only the tip f the prbe senses the internal prduct temperature; therefre, it is imprtant the tip be placed crrectly in the prduct fr internal temperature accuracy. Push the prbe tip halfway int the prduct, psitining the tip at the center f the fd mass. When inserting the prbe int slid fds such as meat rast r pultry breasts, push the prbe in frm a straight dwnward psitin r in frm the side t the center psitin. f placing int a semi-liquid r liquid prduct, the prbe cable must be secured t keep the prbe psitined prperly. D nt let the prbe tip tuch the edges, bttm r side f a cntainer. Tape the prbe cable t the lip r edge f the cntainer. NOTE: When cking by prbe, insert the prbe int the raw prduct after the ven has been preheated. WAT ONE FULL MNUTE t allw the prbe temperature t decrease t the internal temperature f the prduct. Press the start buttn t begin the cking prcess after this prbe temperature adjustment perid. A false prbe reading f the internal prduct temperature will cause the ven t default t a hlding temperature. Prbe Calibratin: 1. T verify prduct prbe calibratin, place the prbe in a warm glass f water alng with a quality independent digital thermmeter and press the prbe key fr five (5) secnds. Cmpare readings. 2. f calibratin is required, the unit must be in the pwer up hld mde. Frm the ff state turn the unit n. The unit will begin t perate in the pwer up hld mde, press the prbe key fr eight (8) secnds until the unit beeps twice and a temperature is displayed. Adjust the prbe temperature t match the independent prbe by pressing the up r dwn arrws t increase r decrease the temperature. Repeat step 1 t verify. 3. Repeat steps 1 and 2 t verify the prbe calibratin as necessary.

Oven preheat indicatr will illuminate and the last set cking temperature is displayed. T change the ck temperature, press the Up r Dwn Arrw Keys. f cking by time press the Time Key. The green Time indicatr will illuminate and the last set cking time will be displayed. T change the set time, press the Up r Dwn Arrw Key. The display will alternate between the set temperature and the elapsed time. f cking by prbe press the Prbe Key. The green Prbe indicatr will illuminate and the last set internal prduct temperature will be displayed. T change the set temperature, press the Up r Dwn Arrw Key. The display will alternate between the set temperature, the elapsed time, and the prbe temperature. T set Hld temperature Press the Hld Key. The green ck indicatr light will remain illuminated. T change the hld temperature, press the Up r Dwn Arrw Key. The display will alternate between the set hld temperature and the amunt f time the prduct has been in the hld mde. Preset Keys with stred cking prgrams will have green indicatr illuminated. The ven will autmatically enter preheat mde. Oven will beep peridically when it has reached a preheat ready state, and bth the Ready and Start indicatr lights will flash. T prgram a preset menu key, see Prgramming a Preset in this manual. Press Start key t begin cking cycle. 3 OPERATON Prgramming a Preset GENERAL OPERATON - DELUXE CONTROL OVENS Select the prduct t be prgrammed and begin prgramming with the ven cntrl pwer Off. Press and release cntrl On/Off key. The ven will beep fr ne secnd and pwer t the unit will be indicated by an illuminated green indicatr light lcated in the upper left crner f the On/Off key. The ven will begin perating in the hld mde. The amber Hld indicatr will be illuminated and the last set hld temperature will be displayed. T set Ck temperature Press Ck Key. Oven preheat indicatr will illuminate and the last set cking temperature is displayed. T change the ck temperature, press the Up r Dwn Arrw Keys. f cking by time press the Time Key. T change the hld temperature, press the Up r Dwn Arrw Key. The display will alternate between the set hld temperature and the amunt f time the prduct has been in the hld mde. Oven will remain in the Hld mde until the On/Off key is pressed. T set Smke time Press Smker Key. T set the smke time desired, use Up r Dwn Arrw key. The last set time will be displayed. Select a letter cde fr the prduct prgrammed by the previus steps. Press and hld the selected Preset key fr tw secnds. When the preset has been saved, yu will hear a ne secnd beep and the preset light will illuminate. Nte: Only ne preset can be prgrammed at a time. f prgramming an additinal preset is desired, the unit must be started and stpped either by cycling the pwer t the cavity r by pressing the Start/Stp key. The last Preset Key used will be the ven cking run sequence fr the next prduct t be prgrammed. Settings can be manually changed fr the next prduct and an alternate pre-prgrammed letter key selected. Erasing a Preset T erase a prgram, the ven must be in either the pwer-up hld mde r in the preheat mde. The ven cannt be running a Preset Menu prgram. When the ven is in the pwer-up hld mde r in the preheat mde, press and hld the Cancel Key and then the apprpriate letter Preset Key t be erased fr tw secnds. When the preset has been erased the ven will beep fr ne secnd. MPORTANT - After prgramming a specific prduct int memry in a prgrammable preset key, it is very imprtant t make a written permanent recrd f the prduct and the prgram letter assigned. T lck the Preset Keys, press and hld the Key until the ven beeps. Release the key. The green indicatr n the key will illuminate. Oven Preset Keys A thrugh H are nw lcked. Nte: Only the ven Preset keys A thrugh H are affected by this lck-ut in rder t als allw the ven t be used with the unprgrammed Ck, Prbe, r Hld mdes. T unlck the Preset Keys, press and hld the Cancel Key alng with the Key fr tw secnds until the key light n lnger illuminates. Release all keys. The ven preset keys are nw unlcked. Fahrenheit r Celsius Selectin With the cntrl in the ff mde, press and hld the Up Arrw Key until the display shws the current selectin. Press the up r dwn buttns t tggle between the tw ptins. After each change the buttn must be released. The display must clear befre the prcedure can be repeated. Cntrl Panel Lck and Unlck The cntrl panel can be lcked at any time in rder t prevent inadvertent r accidental setting changes. T lck the cntrl panel, press and hld the Up Arrw Key and then press the On/Off Key. Yu will hear a brief beep and the panel lck indicatr will illuminate. Release all keys. The ven s cntrl panel is nw lcked. Nte: The cntrl panel is nw fully lcked with the exceptin f the On/Off Key and Arrw keys. Yu will be unable t turn the ven cntrl ff at this pint. T unlck the cntrl panel, press and hld the Dwn Arrw Key and then press the On/Off Key. Yu will hear three beeps and the panel lck indicatr will extinguish. Release all keys. The panel is nw unlcked and ready fr nrmal use. Beeper Vlume Selectin With the cntrl in the ff mde, press and hld the Dwn Arrw Key until the display shws the current cntrl vlume. Press the Up r Dwn Arrw Key t cycle thrugh the fur ptins (0 = Off, 1 = Lw, 2 = Mid, 3 = High). cking guidelines - deluxe cntrl 12

Always keep dr vents clsed when cking with the smking functin. nsert drip pan n the bttm f the ven cavity. Wd Chips Sak ne full tray f wd chips in water fr 5 t 10 minutes. Shake ff excess water, and place the mistened chips in the wd chip tray f the smker ven. Replace the cntainer in the ven. WARNNG THE USE OF MPROPER MATERALS FOR THE SMOKNG FUNCTON COULD RESULT N DAMAGE, HAZARD, EQUPMENT FALURE OR COULD REDUCE THE OVERALL LFE OF THE OVEN. DO NOT USE SAWDUST FOR SMOKNG. DO NOT USE WOOD CHPS SMALLER THAN THUMBNAL SZE. Ht Smke Prcedure Press and release pwer switch On/Off Cntrl Key. Press and set Ck thermstat t required cking temperature. Press and set Time r Prbe. Press and set Hld thermstat t required hlding temperature. The Oven is autmatically prgrammed t preheat t the set cking temperature. The ven will prduce an audible signal when fully preheated. Prepare prduct fr cking. Lad prduct n shelves. T Set Smking Time Press the Smker Key. Press the Up and Dwn Arrw Keys t select the smke time in minutes. Press Start. Nte: The smking timer activates the heating element lcated within the wd chip cntainer when in either a ck r hld mde. The smke element will nt turn n during preheat r ready mdes. A full wd chip cntainer will prduce smke fr a perid f apprximately 1 hur, even thugh the timer can g past ne hur. Fr maximum prduct tenderizing and t reduce labr during peak preparatin hurs, prducts can be cked and held vernight. These instructins are basic peratinal guidelines nly. Fr cmplete instructins, see the HALO HEAT Guide t Lw Temperature Cking and Hlding prvided with the ven. Cld Smke Prcedure T Enter Cld Smke Mde Press and release pwer switch On/Off Cntrl Key. Press and hld the Smker Key fr a perid f 3 secnds. T Set Cld Smke Hlding Temperature The temperature will default t the last smke hlding temperature set by the user. The hlding temperature range is 14 F t 205 F (-10 C t 96 C). T increase this default temperature, press the Hld Key and press the Up Arrw t set a higher default temperature. T Set Smking Verificatin Temperature (if desired) Press the Prbe Key Press the Up and Dwn Arrw Keys t select the verificatin temperature. The prbe range is 14 F t 195 F (-10 C t 91 C). This will incrprate the prbe int the cldsmking prcess and the cntrl will alarm if the temperature exceeds the prbe set pint. T Set Smking Time Press the Smker Key. Press the Up and Dwn Arrw Keys t select the smke time in minutes. Prepare prduct fr smking. Place stainless steel tray filled with ice n shelf abve the smker tray. Lad prduct n shelves. Press Start.
