2 Grader Industry confirms: Individual egg handling results in more Grade A s Bill Hickman: 2% more Grade A s with Moba s individual egg handling Hickman s Family Farms has been family-owned and operated in Arizona since By 1993, Hickman s was left standing as the only Arizona egg producer with chickens and a USDA-inspected processing plant. Despite the challenges of the egg industry, the Glendale operation continued to expand. In the late 1990s a new operation opened in Buckeye with laying houses that are each housing 130,000 hens. In August 2002, a facility was launched in Maricopa where each house holds 230,000 birds. What does Individual egg handling offer? Once the eggs come onto rollers of the Moba Omnia egg grading machine, each egg is treated as one individual product. Also all data belonging to this single product is kept throughout the entire process. At the infeed this means that all information about dirt, leaker, crack and weight properties travels along with each egg and is registered per supply-batch. Even if multiple houses or suppliers are processed simultaneously, this principle works per infeed batch. Once the eggs are passed the transfer in the tracks, blood and color properties are added and based on all this information, the eggs are allowed into a certain product. The Buckeye Facility Hickman decided for a Moba Omnia egg grader in 2008, when a new Omnia FT 500 was installed for the Buckeye facility. The experiences with this first Moba resulted in repeated investments in 2 more Moba Omnia s. In 2009 another Omnia FT 500 was installed and in 2010 an Omnia FT 330 was added. Bill Hickman, one of the owners, says: The Moba Omnia works with a different philosophy. After the first grading results came in we were amazed by the result: 2% more of our eggs made it to the shelf of the super markets! Looking at the technology it is not that strange that 2% more Grade A s are being produced. At the beginning of the machine, eggs encounter an accumulator system that avoids pressure when going onto the rollers. And once the eggs are in the machine they never are in contact with other eggs again. This in itself reduces chances for machine cracks and creates a superb output quality. This system, called Individual egg handling, also allows the computer to know the exact position of each individual egg even into the package. With this knowledge, the computer provides a product administration and full traceability as a standard feature. And the computer control does not only offer administrational functions. Because the position of each egg is controlled, the qualities of individual products can be programmed very accurate, making maximum use of all incoming eggs. And this on its turn contributes to the overall aim: the highest possible net efficiency. This enables the possibility to create multiple products with different qualities simultaneously. In the packers the eggs are transported in individual pockets without any hitting, rubbing or colliding against other eggs. The individual pockets significantly reduce the risk for machine cracks and cross contamination. This design also opens up the possibility to control the content of each individual pack. Knowing the position of every individual egg allows the system to ensure a certain shell quality or weight in a pack, but also situations are operational where customers print the exact total egg weight of a pack or on-the-pack-accurate traceability data. Last but not least are the individual pockets limited in number and easily to remove and clean. Literally every egg touching part in the packer can be clicked out and replaced by a clean set in minutes, while the used sets can be cleaned off line. Clean and disinfected packers with only a stop of a few minutes or an exchange routine during the coffee break!! 2

In the vast countryside of Whitewater, Wisconsin lays S&R Egg Farm, a thirdgeneration family-owned and operated egg farm. The nearly 800 acres of farmland are home to 2.4 million healthy, egg-laying hens producing up to 2 million of Wisconsin s finest farm fresh eggs daily. For 6 decades the Schimpf family has delivered farm fresh chicken eggs to local families, grocery stores, distribution centers and egg wholesalers in Wisconsin and across America. For the S&R egg grading activities a brand new Omnia FT 500 was installed in July After 6 weeks of operation we interviewed Nick J. Schimpf, the general manager of S&R. Nick: Here at S&R, we keep a very close eye on our processing information. After the installation of the new Moba, it took me a while to get used to a new concept in the grading of eggs. At first I was focusing on getting the numbers in line with my previous experiences, but then I started to appreciate the principle of the Moba Omnia when in the end some 1.5 to 2% more Grade A s were counted. The engineers who installed the machine, were tuning the performance during the startup phase with only one goal: Combining the highest possible output with the best possible egg quality. This made me think. For instance the number of rewash eggs was such an eye opener; adjusting the machine to a milder washing process with a slight increase of rewash eggs is in the end better than aiming for only clean eggs by making the washing process more aggressive, even for the clean eggs. Avoiding impacts on the eggs for the highest possible yield is part of Moba s philosophy: the gentle touch. All process steps with this gentle touch philosophy add up to a better net efficiency. Key feature is the individual egg handling where there is entirely no egg to egg contact after the eggs enter the machine. This keeps the number of machine cracks to the absolute minimum and opens the way to controlling the output quality of each product to your preset requirements. S&R does not only appreciate the concept of individual egg handling for creating the highest possible output, but also for it sanitary features. Nick Schimpf: In these days where food safety is a hot issue, it is good to know that literally all parts in a packer that come in contact with eggs can be easily clicked out and disinfected. Basically the whole packer consists of only a few elements made of industrial plastics. Washing these is easy and can be done while the machine is running by using an extra spare set. This is combined with a foamable and high pressure cleanable infeed. These feautures on the Moba machine are a big step forward. After experiencing the Moba Omnia machine for 3 months, the management of S&R decided to invest in a second Omnia 500 grader for their operation. This grader will be installed in the spring of

4 Grader One face to the customer Integration of egg processing activities within Moba Two years ago OvoPro started as a sister company of Moba with the aim to supply solutions for the egg processing industry. In the ambition of becoming a worldwide specialist in this field, OvoPro focused on process knowledge next to the equipment. Process design combining maximum shelf life with perfect functional properties was basis for many successful projects over the last two years. To enable future expansion and serve the customers better, the logical next step is to integrate the OvoPro activities into the mature Moba organisation. By doing so, the OvoPro activities will become part of Moba, resulting in a Moba OvoPro egg processing product line. Both the worldwide service and sales network as well as the research and development departments in Farmington Hills, USA and Barneveld, The Netherlands will become a vital link in future processing activities. For our customers this means One stop shopping. As many companies have both grading and processing activities, it is a big step forward to offer one contact point for sales, service and spare parts. Also more and more projects are requested with a smart combination of grading and processing. Latest Breaker developments While integrating OvoPro activities in the Moba organisation, one of the first major projects is a series of improvements on the breakers. The Moba breaker is a further development of the well known and robust OvoPro concept that has been around for years. While reliability and uptime are unmatched, wear and tear is low compared to other breakers. When looking at the yield of an egg breaker, one of the vital elements is the cracker-unit itself. When the cut to open the eggshell is applied correctly, the liquid from the egg can flow freely from the shell. The ratio of resulting egg liquids to incoming egg weight is called the yield of an egg breaker. The Moba cracker construction is designed in such a way that compared to other breakers, 50% fewer parts are needed while the yield of the system is uncompromised. Less parts and a robust design offers maximum performance and a long life time with a minimum of down-time for maintenance. Next to the yield, the bacterial load of the resulting egg liquids is also benefitting from a correct opening of the shell. When an egg is not cut correctly it is possible that falling shell particles will end up in your product, contaminating the liquids with the micro organisms found on the eggshell. The lower the bacterial load is in the first place, the less aggressive the pasteurization process needs to be. This results in the best possible functional properties of the liquid products. Every egg breaker in the world consists of multiple cracker and separation units in some kind of conveyor-like transport mechanism. 4

5 Using both the upper- and lower part of this transport system may be compacting the footprint of a breaker, but when it comes to contamination risk the MOBA breaker is without any compromises: all actions with the eggs and liquids are taking place in the upper part of the conveyor system and the return part at the bottom is only carrying empty units. In this construction there is no risk of falling particles contaminating downstream product transport. Nevertheless Moba came up with other improvements to keep the footprint of the machine as small as possible while improving the egg handling and transport to the breaker. And this on its turn helps creating the best possible product. Preventing micro cracks in the incoming eggs will influence the breaking process positively. If the mechanical opening of the egg is not influenced by any micro cracks, the maximum liquid will drain from the egg and the risk of falling shell particles is minimized. Result: high yield and low bacterial load In all steps needed to bring the egg into the cracker, new technologies are applied and the use of Moba loaders and accumulators, known for the most gentle egghandling in the industry, will contribute to your net result. Once the eggs are broken a new Moba Yolk scanner with the latest vision technology automatically detects the presence of yolk in the egg whites. The scanner sensitivity can quickly be adjusted to the size of the yolk spot that is allowed in the albumen. If unacceptable, the yolk scanner triggers the release mechanism and the egg ends up in the incidental-whole-egg bin. When the scanner is set for high sensitivity the lowest thinkable fat content can be achieved. The result is production of cleaner egg whites and high-solids egg yolk combined with minimal incidental whole-egg production. 6 Grader Increased demands for egg washing and drying New Moba Omnia configuration offers better drying in a smaller footprint In Moba Omnia egg grading machines, various types of egg washers and dryers can be used. In the Americas egg washers and dryers of Kuhl are used. These systems are known for good washing quality combined with low impact on the eggs. Slowly but surely the requirements in the Americas are changing. The last remaining water-rests of the final rinse, that were traditionally accepted in this market, start to give problems when ink jetting of the eggs is desired. Furthermore, does liquid offer an environment where micro organisms can multiply. We anticipate that today s discussions on food safety and eggs will also result in higher requirements for egg drying. In Asia, super-dry eggs are a firm requirement as many eggs are packed in sealed plastic packs. A modular Moba drying system is used to provide super dry eggs, even in humid conditions of Asian summers. Let s first look at why the Asian setup of a Moba machine has a better drying performance. The most important feature in such a system is a drying section that mechanically removes water. In this section eggs are NOT spinning while a vertical downward airflow is applied. This makes that drips of rinse water are collected at the bottom side of rollers and eggs. These drops are removed by a so called drip remover. This system can collect % of the water, which can be upto 0.5 liter per minute on an 500cph machine!!. In the next stage, eggs are transferred on another roller section where they start spinning. By airflow, the remaining water is vaporized. In the latest Omnia development this same principle is applied to a more universal configuration. In this configuration a dryer only copes with roughly 20% of the water, compared to the traditional American set up because 80% of the initial water on the egg is already removed before the actual vaporization starts. Imagine that instead of 0.6 l/minute only 0.1 l/minute needs to be blown away!! With the increasing demands in the Americas, a new setup has been designed for this market as well. It combines all the elements of the above drip-removal idea with even a more compact footprint compared to today s setup. The new design uses the split that already exists in every Moba infeed: the Multidrum where orientation takes place and leaking eggs can be dumped. By washing the eggs and using a drip removal system this drum-system, leakers can be removed in between washing and drying while relative dry eggs pass on to the second section, the actual Kuhl drying system. 7 Mopack 150 At VIV Europe the prototype of the Mopack 150, a farmpacker with a capacity of 150 cases per hour was introduced to the market. The principle of this farmpacker is different from the other Moba farmpackers. A long time ago Moba recognized that a system that waits for six eggs and only then makes a start-stop movement, lacks gentle egg handling and is limited in net efficiency. As a result, today s Mopack series operate with a continuous carrousel movement to offer the gentle touch and extreme high net efficiency. A technological breakthrough now enables the creation of a packer that does process 6 eggs in parallel, but combines this with a continuous moving system. This new principle is now in an extensive field test. Production is planned for the end of this year and first field installations are expected to start in the 2nd quarter of The principle At first the eggs are accumulated in such a way that the system predicts the availability of eggs at the entry ports of the packers some seconds in advance. The packer will then adjust the speed so that a smooth continuous motion will pack all the incoming eggs. This means no waiting for the 6th eggs long as the supply of eggs is adequate. After the entry ports, the eggs will be oriented on a small roller section and will be placed point forward onto transport cups. The cups are mounted in a way that allows excellent egg handling. The cups will transport the eggs to a next stage: the drop system. The conversion to the right pitch of the tray is also carried out by the cup-system. The drop system itself is also characterized by a continuous movement. Two eggs-guide will rotate and guide the eggs down with a forward movement that equals the continuous moving tray. In this way the eggs are placed with a zero difference in speed. The result: even the weakest eggs are placed in the trays perfectly.
