2 Recommended Requirements for Operation of a Shell Egg Grading Plant The recommendations presented in this folder are minimum requirements formulated by Virginia Division of Markets and V. P. I. Poultry Department to serve as a guide in setting up and operating a shell egg grading plant. Administrative pers::mnel is n0t included in these recommendations. All references relative to volume capacity are based on the 30-dozen case. HAND CANDLING (Suggested minimum size operation) 'Volume Needed Minimum of 300 cases per week Personnel Required - 3 Two candlers (capable of grading and packing at leas'; 30 cases of unsized eggs per day or 35 cases of sized eggs when quality averages 80 "; grade "A" or better) and an inplant operator who will pack cartoned eggs, furnish graders with cartons and transport eggs to and from cooler Equipment Required Candling bench for 2 operators 2 candling lights 2 hand scales conveyor belt automatic carton set-up machine 1 automatic closer and sealer with turntable Space Required Candling room 15' x 30' (for two grader operation) (The turntable is 5' in diameter and the closer and sealer 4' 6" x l' 6"; an area 10' long is recommended for this equipment. Approximately 36 sq. ft. - 6' x 6' - of darkened area is needed per candler) Cooler sq. ft. of space (with cooling equipment capable of reducing temperature to 40 F. with a relative humidity of 80~{) IHand cartoning set-up machine can be purchased for about $35 or the set-up machine can be eliminated with use of molded cartons. Such a change would make some reduction in monthly equipment rental cost.

3 Storage area sq. ft. Desk and filing cabinet - 50 sq. ft. Lavatory and toilet facilities Excluding the building, toilet facilities and room partitions, $2.200 to $2,500 will probably be needed to purchase and set up the above equipment. In addition, equipment rental will cost $35 to $40 per month. The purchase and installation of egg cooling room and humidifying equipment, including the cooler door, will cost about $3.50 per square foot and the insulation and inside wall covering will cost 25 cents to 30 cents per board foot. Any increase in volume would require a proportionate increase in personnel, facilities, and equipment, other than carton set-up, carton closer and sealer, and conveyor equipment. The most economical hand candling operation requires 15 persons: 12 candlers, 1 packer (packing cartoned eggs), 1 man bringing eggs and moving cases, and 1 in-plant serviceman. This operation would produce approximately 360 cases of cartoned eggs per day. Additional equipment which feeds eggs to the candler will reduce candling cdsts. Such equipment will cost approximately $5 per candler per month. 4 MACHINE CANDLING With One Candling and Sizing Machine - Capacit!I apprn.rimately 12 cases per hour For an efficient machine candling operation, equipment must be used to the maximum capacity with a minimum of personnel, and eggs must average 85'; grade "A" or better quality if the job is to be done properly. Office and toilet facilities It appears that this equipment could be operated by two 8-hour shifts to make it more economical and practical, with cooler and storage space increased accordingly. The approximate cost of setting up this type of operation, excluding cost of building, toilet facilities, and room partitioning, would probably be ab:mt $7,000 plus an equipment rental of $35 to $40 per month. If machines to take care of larger volume are added, a proportionate increase in personnel, facilities, and equipment other than the cartoning set-up, carton closer and sealer, and conveyor equipment, will be needed. With three machines, however, it may be possible to eliminate one man and operate with eight men instead of nine. Candling room should be extended 10' for each additional machine. A candling room for three machines should be approximately 20' x 50'. With Two Larger Candling and Sizing Machines - Capacity approximately 40 cases pe1 hour Volume Needed 1,500 to 3,000 cases of eggs per week. A volume of 1,500 cases would require the operation of one machine for two 8-hour shifts, or two machines for one 8-hour shift per day. Two machines operated by two 8-hour shifts should handle a volume of 3,000 cases per week. Personnel Required - 7 (with two machines using automatic egg packing equipment) 2 candlers, 1 transferring eggs, 1 packing loose and cartoned eggs, 1 packing in cases, and 2 floor men. If automatic packing equipment is not used, a total of 3 more egg packers will be needed. 6 Space Required Candling room 118' x 40' Cooling room approximately 2,000 sq. ft.4 Storage Area - 1,500 sq. ft.4 Office and toilet facilities Setting up this type of egg grading plant with two larger type machine candlers and sizers with automatic egg packing equipment would require an expenditure of about $40,000 (not counting cost of building, toilet facilities, and inside uninsulated wall partitions), and a monthly equipment rental of $45 to $55 per month. It appears that this equipment could be operated by two 8-hour shifts, to make it more economical and practical, with cooler and storage space increased accordingly. OTHER GENERAL INFORMATION A special inspector's booth equipped with light and sc:i.les is needed in large operations where this individual is not performing a dual service of prcduction candling and inspection. If a new building is being constructed and a relatively large volume of eggs is to be handled, it appears that a straight line operation with a receiving cooler at one end and a shipping-out c~oler at the other would be more satisfactory than just one cooler for all eggs. Air conditioning in the grading room capable of reducing the temperature to 65 F. in the summer is also considered desirable. Sanitary facilities within the plant must meet the re1uirements specified in Regulations Governing tlw Gradina and Inspection of Shell Eggs and U.S. Standards, Grades, and Weight Classes for Shell Eggs. ~With volume of 1,400 to 1,600 cases per week.
