3 Inside Expo Screen and Bump Bar Buttons Definition Select Start Item Egg button once you have begun cooking the item. It moves the item on the egg screen from the start column to the cooking area. Navigate between items/orders. Display the totals of all items on this screen at the time. Touch Bump Inside Expo button to close. Displays all the items that were bumped on the egg screen in the last 20 minutes. Use the arrows to select an item, and then touch Bump Egg button to recall that item to your monitor. Displays all the items that were bumped on the inside expo screen in the last 20 minutes. Use the arrows to select an item, and then touch Bump Egg to recall that item to your monitor. Bumps the item off of the egg screen. Bump or sell the selected order, which removes the order off the Inside Expo screen. The item will change to green on the Outside Expo monitor to let them know it s ready.

4 Inside Expo Screen and Bump Bar All items for the ticket runner and middle person will fire to the top of the screen (Egg) in the start column. The bottom section of the screen (Inside Expo) shows how items should be plated for each order. Egg Screen The items will fire based on their cook times and need to be started as soon as they are fired. The item will fire to the start column and will be bumped to the cooking column when the order is started. The item will turn from purple to blue. Once the order is complete it will be bumped from the screen To start the cooking: 1. Highlight the item using the arrows and select Start Item Egg button. To Bump sell the item: 1. Highlight the item using the arrows and select Bump Egg button. Inside Expo Screen Displays the orders for plating as well as letting you know if it is for dine in or carry out Bumping selling the order will release it from the kitchen and show up as ready on the Outside Expo To bump sell the order: 1. Highlight the order using the arrows and select BUMP INSIDE EXPO.

Navigate between items/orders. Undo the last action. If you just bumped an item, Undo Last will recall that item. Displays all the items that were bumped on the meat screen in the last 20 minutes. Use the arrows to select an item, and then touch Bump/Close button to recall that item to your monitor. Display the totals of all items on this screen at the time. Touch Bump/Close button to close. Open the recipe information for the selected item. Switch between the different monitors in the restaurant (Inside Expo, Meat, Outside Expo and Salads/Dessert). Continue pushing Toggle until you return to the view you started from. Bump or sell the selected item, which removes the item off the screen.

6 Meat Screen and Bump Bar All items for the meat cook will fire to the Meat screen. The items fire based on their cook times and need to be started as soon as they are fired. The item will fire to the start column and will be bumped to the cooking column when the order is started. The item will turn from purple to blue. Once the item is complete it will be bumped from the screen. The bin on the bottom of the screen will tell you how many of each of the items that you need total at a quick glance To start the cooking: 2. Highlight the item using the arrows and select the Start button. To Bump sell the item: 2. Highlight the item using the arrows and select Bump/Close button. If you accidently bump an order before it is ready you can unbump it: 1. Select the Recall button. 2. Highlight the item using the arrows. 3. Select the Bump/Close button. 4. If you need to unbump the last item, select Undo Last button. Note: The bins on the bottom of the screen give you a total count of the items on the screen. For example, 24 sausage links = 24 single sausage links.

8 Salad/Dessert Screen and Bump Bar All items for KP will fire to the Salad/Dessert screen. The items will fire based on their cook times and need to be started as soon as they are fired. The item will fire to the start column and will be bumped to the cooking column when the order is started. The item will turn from purple to blue. Once the order is complete it will be bumped from the screen and will then be flagged as ready on the outside expo screen. To start the cooking: 1. Highlight the item using the arrows and select Start To Bump sell the item: 1. Highlight the item using the arrows and select Bump/Close button. 9 Outside Expo Screen and Bump Bar Button Definition Navigate between items/orders. Bump the first ready order off the screen (even if it s not selected). Bump the second ready order off the screen (even if it s not select). Display the totals of all items on this screen at the time. Touch Bump Ok button to close. Undo the last action. If you just bumped an order, Undo Last button will recall that order. Allows you to change the staff level setting. Open the recipe information for the selected item.

10 Allows you to select new cook times. Displays all the items that were bumped on the screen in the last 20 minutes. Use the arrows to select an item, and then touch Bump/Unbump button to recall that item to your monitor. Switch between the different monitors in the restaurant (Inside Expo, Meat, Outside Expo and Salads/Dessert). Continue pushing Toggle button until you return to the view you started from. Allows you to scroll left. Allows you to scroll right. Bumps the highlighted order off of the screen. Unbumps a bumped order when recalling an order.

11 Outside Expo Screen and Bump Bar All dine in and carry out orders from the corresponding side of the grill line will be displayed on the Outside Expo screen when they are sent to the kitchen. Orders will display on the screen based on the times they were sent to the kitchen. When an order is complete, it will display a green flag and the word Ready on the screen. Orders that are flagged ready will move to the front of the orders. Carry out orders will be marked with a car icon and say Carry Out. Once the order has a green flag and you see the word Ready on the screen, tray the order and bump the order off of the screen by selecting one of the three ways listed below: 1. Highlight the order using the arrows and select Bump/Unbump 2. Select Bump Cell 1 button. Doing this will bump the first order that is flagged ready. 3. Select Bump Cell 2. Doing this will bump the second order that is flagged ready. If you accidently bump an order before it is ready you can unbump it by: 1. Select the Recall button. 2. Highlight the order using the arrows. 3. Select Bump/Unbump button. 4. If you need to unbump the last item, select Undo Last button. Note: It is important to bump all orders as soon as they are trayed. This will stop the cook time and eliminate someone else from trying to tray up an order that has already been served to the guest. 6

12 Manager Functions To Know: The Staff Routing Level and Cook Time Override are functions that can only be performed by a manager. To Do: Staff Routing Level: 1. Go to Outside Expo Bump Bar 2. Select Staff level 3. Use the arrows to highlight the Staff Level that you would like to turn on 4. Select Bump Cell 1 NOTE: If once you are in Staff Level and there are no changes that need to be made, select Staff Level to exit out. Cook Time Override: 1. Go to Outside Expo Bump Bar 2. Select Cook Time Override 3. Use the arrows to highlight the Cook Time Override that you would like to turn on 4. Select Bump Cell 1 NOTE: If once you are in Cook Time Override and there are no changes that need to be made, select Cook Time Override to exit out.
