2 About today s event Welcome Today s event, hosted by Co-Innovate, is a formal launch of an EPSRC* funded research project Prototyping Open Innovation Models for ICT-Enabled Manufacturing in Food and Packaging which is about the use of crowdsourcing tools to innovate food and packaging with consumers. This launch event is about informing the food and packaging industry about our research objectives, as well as being an open invitation to industry to collaborate or participate in the project. Through working with Co-Innovate, we hope to work with you to translate our research into opportunities to support your open innovation aspirations. About Co-Innovate Co-Innovate is an exciting innovation support programme, jointly funded by the European Regional Development Fund and Brunel University. The programme aims to provide 150 small and medium sized enterprises (SMEs) in the London region support in new product and service development leading to business growth for the participating companies and economic and employment benefits for the capital. Co-Innovate aims to facilitate access to knowledge, expertise and resources within Brunel University for the benefit of London-based SMEs. Overall the project aims to bring together people to share ideas and knowledge and act as a catalyst for collaborative activities linked to new product and service development. * EPSRC (Engineering & Physical Sciences Research Council) is the main UK government agency for funding research and training in engineering and the physical sciences, investing more than 800 million a year in a broad range of subjects from mathematics to materials science, and from information technology to structural engineering.

3 About Prototyping Open Innovation Models for ICT-Enabled Manufacturing in Food and Packaging Prototyping Open Innovation Models for ICT-Enabled Manufacturing in Food and Packaging is funded by the EPSRC Future ICT-enabled manufacturing cross-disciplinary research clusters initiative. We are in an age of participation, where consumers no longer need to be on the periphery of development. Companies are increasingly finding that ideas and innovations originate from outside their organisations. Crowd-sourcing is gathering pace, as companies seek to tap into the global knowledge base through their open innovation strategies. Brands need to develop new relationships with Prosumers in which they may become a substantial part of the design and development process. We propose to apply this model of behaviour to explore opportunities for open innovation whereby a disparate group of individuals congregate around food and packaging design and production (two of the largest industry sectors in the UK). The aim of this 4M project ( 2.4M from EPSRC + 1.6M from industry) is to design and develop a new crowd sourced food and package design and innovation platform comprised of a suite of ICT tools for state-of-the-art manufacturing processes and implementing customers in the loop co-creation product development processes. The platform and the tools will enable (i) Harvesting content from the crowd and lead users, (ii) Synthesising content into an actionable format, and (iii) Integrating design and production systems. The platform and plug-in tools comprise a virtual food product development environment that aims to de-bottleneck and streamline the food innovation pipeline by a cloud-based software platform and through the use of open innovation models to engage the consumer in the product development loop. This will significantly shorten the time to market for such new products by aligning and integrating design, manufacturing processes and systems with people. The project is being led by Brunel Design & Advanced Manufacturing (AMEE) in collaboration with Horizon Digital Economy Research Institute (University of Nottingham), and industry partners.

4 Speaker & Researchers Profiles Dr Sharon Baurley Sharon is Head of Design in the School of Engineering Design at Brunel University. Her research focuses on open design methods and tools that enable brands to have design conversation with consumers. Her research is funded by RCUK Digital Economy, EPSRC, AHRC. She has consulted for Courtaulds Textiles, London, Gianni Versace, Milan, Marks & Spencer, London, and Unilever, UK. Dr Charalampos (Harris) Makatsoris Harris is a Chartered Engineer, and Head of Research of the Advanced Manufacturing division at Brunel University, having previously researched manufacturing at Imperial College in a range of industries. He has a long standing expertise in Manufacturing Systems Engineering and leads a multi-disciplinary team undertaking research in manufacturing processing and automation. Professor Tom Rodden Tom is professor of interactive systems and deputy director of the Horizon hub. His research interests focus on user centred ubiquitous computing and understanding interaction in real world settings. His work is interdisciplinary in nature combining an understanding of users with novel technological developments. He is widely published and his work has been funded by EPSRC, ESRC, AHRC and RCUK. Andy Kerridge Andy s food industry career started in the meat business supplying Marks & Spencer, then he moved into foodservice, firstly for Whitbread Restaurants, then 16 years with Burger King. At BK, Andy worked mostly in Food Safety & QA, but also covered a range of other areas including new market entry & product development. Leaving Burger King in 2012, Andy is now a consultant, chair of the Food Group at the SCI, & a Fellow of the Institute of Food Science and Technology. Orion Kelly Originally from San Francisco, Orion began his career as a professional Chef. Working among cutting edge Chefs in restaurants such as The French Laundry and Chez Panisse, Orion learned what it takes to influence an entire industry. Moving to London in 2007 his career took a new direction; helping launch GAILs as the Head of NPD & then becoming Group Head of Innovation at Senoble. Currently, he is owner of consultancy firm, Innovation In Food.

5 Chris Thorpe Chris is the founder of Intelligent Design Associates (IDeA) - a multidisciplinary design group working at the intersect of design, art and technology. He has extensive experience in the design sector having worked with a wide range of leading brands in FMCG, transport, security, healthcare, sports and leisure - as head of product design at QinetiQ (2000 to 2010) and at Cranfield University ( ). Paris Selinas Paris Selinas was born in Thessaloniki, Greece in 1983 and started sketching soon after that. He holds a BEng and a MEng on Electrical and Computer Engineering and a MSc on Integrated Product Design. His focus areas currently include open and collaborative design, crowd sourcing and chocolate consumption. Jerome Linder Jerome is a Sensorial Design and Marketing consultant. He s worked for a decade in the world of flavors & fragrances, exploring consumer behaviours to drive innovation in food and packaging. He s since extended his expertise to the other senses and now works with independent foodies and global manufacturing companies alike to create emotional product experiences that make sense. Stephen Green Stephen has 25 years of experience in the design and branding industry and six years at Ravensbourne College of Design and Communication, prior to joining Brunel. He currently combines a major teaching input to the high profile design courses at Brunel, with leading the University s role within Co-Innovate and Designplus. He has led many projects with external organisations including work with the BBC, Nokia, Mitsubishi, Kodak, Tate Modern and Marks & Spencer. Ian Ferris As Co-Innovate s Innovation Director, Ian is an experienced design and product innovation specialist & has extensive experience in helping SME s to innovate. He works to help translate early stage business ideas, technology innovations or fledgling product or service concepts into marketable propositions. Working with organisations such as the Design Council and the TSB he has advised businesses and research teams on innovation and design across a range of sectors.

6 Research Areas The following research expertise, which has relevance to the Food and Packaging sectors, can be found amongst the project team: Brunel Design Research Centre Research in Design is coordinated under the Brunel Design Research Centre. The thematic streams within the Centre are aligned with current environmental, societal and technological imperatives: Design and human wellbeing (human centred design, inclusive design and ergonomics) Design and environmental sustainability (behaviour change; electronic materials, textiles, virtual/vr space) Design for the creative industries (computer aided design; human modelling & simulation; open design & the digital economy; materials & manufacturing design; design policy & management) Horizon Horizon is a research institute at The University of Nottingham engaged in digital economy research. Funded by Research Councils UK (RCUK), The University of Nottingham and over 100 academic and industrial partners, the institute comprises both a research hub and Doctoral Training Centre. Horizon research focuses on the role of always on, always with you ubiquitous computing technology. Our aim is to investigate the technical developments needed if electronic information is to be controlled, managed and harnessed to enhance the way we live, work, play & travel in the future. Advanced Manufacturing & Enterprise Engineering (AMEE) AMEE is a world class research group in advanced manufacturing technology, enterprise engineering and engineering management, this is truly a place where cutting edge research brings the frontiers of science and technology to postgraduate and undergraduate students.

7 National Centre for Sustainable Energy use in Food Chains Led by Professor Savvas Tassou, the Head of the School of Engineering and Design and a renowned expert in refrigeration and energy research, the new Centre has received substantial funding from Research Councils UK and is a partnership with Birmingham and Manchester Universities and 33 industrial supporters. The Centre, launched in September 2013, provides a unique cross-disciplinary hub of engineers, scientists and industry experts to develop energy-efficient food manufacturing, distribution and retail systems to support companies achieve their short, mid and long term CO2 emissions reduction targets. Wolfson Centre Centre of Materials and Centre for Phosphors and Display Materials. Current areas of research include nanomaterials, nanophosphors and nanostructured carbon, biofuels, polymer extrusion and biodegradable food packaging.
