2 Cookies Great variety The Company Niederrheinische Formenfabrik GERH. JANSSEN & SOHN was founded in the year 1872 and the 4th generation is now running the company, still in Krefeld, near Düsseldorf. In the early days the owner rode from bakery to bakery and from farm to farm in his horse and cart to sell the wooden models to bake Spekulatius, a speciality of our region. Spekulatius is still baked traditionally by most of the bakers today in the north and west of Germany, in the Netherlands and Belgium. The methods of production have changed and improved. The first cookie machines were developed and built in our company about 70 years ago. Modern computerized machines help the baker to produce his cookies today. Cookie-machines made in stainless steel are made today by specialised craftsmen. Our customers are small and medium sized bakeries and confectioners. The capacity of the machines is between 30 and 500 kg per hour, depending on the shape of the cookies. To achieve this, there is a need for sophisticated and proven concepts. 5 For the production of rich cookies but also for economy doughs we 1 recommend the K-type. The machine can be used throughout the year for all types of cookies. The K machines are set up to economically produce all kinds of Spekulatius, fine teacookies and many specialities such as Printen, almond doughs, lattice works, gingerbread doughs, shaped cookies and endless dough sheets. The principle is very simple: Dough goes into the hopper, either in crumbs or in the form of sheets, and is formed between the feeding roller and the pattern roller. The shapes are cut off by the teflon coated blade and are set on the belt and then on the tray. The space between the shapes on a tray can be regulated. The blade is adjustable, so shapes can be formed out thinner than originally engraved on the roller. Trays will be placed from behind into the machine and shapes are formed onto these trays. There is an automatic tray limit switch on every machine to stop after each tray. The machine is made with strong aluminium sides, stainless steel covers and hopper, steel gears, ball bearings, nylon pattern rollers and feeding rollers. Both rollers can be removed without tools in seconds for cleaning. They work on the principle of the rubber roller suction system, which is still used today in the big baking industry. Shapes are not cut from the dough sheet as on the K K 580, but pressed into the suction belt and the small teflon coated roll at the end of the suction belt cuts the shapes from the belt and lays the shapes down on the tray. The rubber roller can be adjusted exactly to the pressure the dough needs. Therefore, the difference between both machines is in the product you will produce. Also these machines are made from stainless steel and have strong steel gears. Ball bearings, both rollers, the stainless steel feeding and the NARLON or brass pattern roller can be removed very easily from the machine for cleaning. front and rear view rubber roller suction system

7 Exact Specifications We can supply different performances, also special machines as per customers requirements. Machines can be placed in front of small steel band ovens or wire ovens or on top of conveyor belts, because all the mechanics are contained in the top of the machine. Supporting stands are made to order. Machines can be made wider afterwards, if necessary, but only in our factory. Cupboard equipment or open stands in different sizes can be supplied. There is space for trays and/or rollers. If you chose our best machine, the front and rear of the conveyor belt can be removed to save pace. The height of the conveyor belt can be simply adjusted. We are prepared to engrave pattern rollers as per your drawings or cookie samples. We are prepared to adapt the machine to Europe standard trays also with higher rims. ( 45 mm ) as well as for US standard trays with 1 high rims, should the shapes not be too small. If you choose the Computronik device, you can programme 99 different products. The machine can form endless dough sheets, endless lattice works, round flat tarts and a lot more, all kinds of small and large cookies, naturally. Call us if you have any questions.
