Theme to be confirmed Food Preparation and Nutrition - AQA 7 th May 2018 x pieces of Non Exam Assessment (NEA) 50% of final grade NEA TASK 1- Food Investigation 1500-2000 word electronic report with photographic evidence. NEA Task Brief- Gluten formation is essential when making different types of dough. Investigate the functional and chemical properties of a flour based dough. Choose bread or pasta. Research- 6 marks (task analysis, research, hypothesis). Investigation- 15 marks (3 x practical investigation and analysis of results including charts, tables, sensory analysis, photographs). Analysis and Evaluation- 9 marks (summary of findings). NEA Task 2- Food Preparation Assessment 10 X A4 sides- Electronic portfolio. Students will prepare, cook and present a final menu of three dishes to meet the needs of a specific context. Students must select appropriate technical skills and processes and create 3 4 dishes to showcase their skills. They will then produce their final menu within a single period of no more than 3 hours, planning in advance how this will be achieved. NEA Task Brief- Plan, prepare, cook and present a range of dishes which are based on a European cuisine. Present three dishes. Research- 6 marks (task analysis, research, initial dish ideas). Demonstrating technical skills- 18 marks (4x practical dishes, 3x practical dish for final menu). Planning for the final menu- 8 marks (time plan, evaluation of 4 practical dishes).

Making the final dishes- 30 marks (3 hour practical lesson). Analyse and Evaluate- 8 marks (nutritional analysis, sensory analysis, costing, conclusions and recommendations).
