[ ] = The pattern will specify how many times to repeat a series of instructions that are given inside the brackets. = inches Using cast iron has become one of my favorite ways to cook just about everything. The way the heat distributes so evenly across the skillet makes cast iron the most desirable choice in my cupboard. Everything about using cast iron is wonderful, from cooking to cleaning, but there is one thing that makes that even heat distribution very difficult to work with--the handle absorbs the heat just as nicely as the rest of the skillet. Thankfully there is an answer to the dilemma that we cast iron enthusiasts suffer--the cast iron skillet handle cozy. There are a few different designs out there for cozies, but this one is my favorite. The first reason is because these cozies have saved the tender skin on my fingers numerous times; my second reason is because this technique was taught to me by a dear kindred friend with whom I share this same love for cast iron. And now I share this technique and this lovely pattern with you, dear kindred cast iron lover. I hope you enjoy the pattern, the process, and your new skillet cozies. Blessings to you,

3 Pattern Instructions This pattern uses the afghan stitch, which is a bit different than your usual single, double or even triple crochet stitches. Interestingly, you never turn your work when you use the afghan stitch, but rather work back and forth (right to left, then left to right). Usually you would use a special hook for this stitch and it is more comfortable to but if you don t have an afghan hook, feel free to use your favorite hook for this project, as this project is small enough to fit on a standard sized hook. What you need: worsted weight cotton yarn (I use Peaches & Cream) H hook (or an afghan hook the same size as your H) To start: Ch. 15 gauge 1 inch = 5 sts finished size Approx. 2" x 4" (without border options) project materials cotton worsted weight yarn hook size H (5.0) pattern notes and possible tweaks Since the piece of fabric you make with the afghan stitch is a square, you can fold it whichever way appeals the most to you before stitching together. Row 1, first half of your foundation row: insert your hook into the second chain, yo, then draw the loop through the chain, leaving both loops on your hook. Think of it like this you will not finish the full single crochet, but rather, just do half of it. cautions and warnings While these skillet cozies will help keep your hands unscathed during your cooking time, it is not recommended to leave your skillet cozy on your skillet while you are cooking, as it can possibly catch fire. Simply slip it on and off as you need it.

4 O ne of my favorite things to use my cast iron skillet for is baking pizza. There is nothing like cutting into a cheesy deep dish pizza and biting into that lovely crust and delicious toppings. Here is the recipe I've been using for our family's pizza dough for years. Next, *insert your hook into the next chain, yo, then draw the loop through the chain*. Repeat to the end of the row. You should end with 15 loops on your hook. Mom's Pizza Dough 1 cup warm water 1 Tbsp sugar 2 tsp yeast 3 cups all purpose flour 1 Tbsp parmesan cheese 1/2 tsp Italian seasoning 1 tsp salt 1 tsp minced garlic 2 Tbsp olive oil In a stand mixer bowl combine yeast and sugar to water. Allow the yeast to proof for 5 minutes. Add all of the ingredients to the bowl and mix with the dough hook for 5-10 (continued on the next page) Row 1, second half of your foundation row (working from left to right): YO, and draw through one loop. *YO and draw through two loops* and repeat from * across until you have only one loop left on your hook. This completes your first full row.

5 minutes, until the dough pulls away from the sides of the bowl. Cover dough with a damp towel and allow dough to rise for 1 hour 30 minutes, or until at least doubled. While the dough is rising, grease your cast iron skillet with olive oil and drizzle the bottom of the skillet with corn meal. Row 2, first half of your foundation row: Insert your hook into the second post (vertical stitch*), YO and draw back through that same post, leaving two loops on your hook. Continue working to the end of the row of posts, ending with 15 loops on your hook. Once the dough is doubled in size, punch down. Divide into two pieces and shape dough into a pizza crust, and press it into your cast iron skillet. Brush with olive oil and sprinkle with parmesan cheese. Allow to rise again for minutes. Row 2, second half of your foundation row: Repeat instructions for the second half of Row 1. Bake for 5 minutes at 450, or until dough is parbaked. Remove skillet from the oven and top with pizza sauce, mozzarella cheese, and any toppings your family prefers. Bake for another 8-12 minutes. Serves 2-4 if using a 12" skillet.

6 Embellish Your Cozy Before finishing, turn, *sk 1 st, 4dc in next st, sk 1 st, sc in next st* to the end (4 shells). Continue to follow directions for finishing your cozy. Rows 3-15: Repeat instructions for Row 2, first and second halves. (Add an extra row if you plan to do a shell border.) Here s what you should have before you go on to finishing your cozy: Before finishing, turn. In next 7 sts, *1 sc, 1 hdc, 1 dc, 1 trc, 1 dc, 1 hdc, 1 sc*. Repeat from * once more, sl st in last st. Continue to follow directions for finishing your cozy. To finish: Fold in half, wrong sides together (either way is fine, just keep in mind the length of your skillet handle if you make it too long, it may catch fire, so shorter may be better).
