Fall/Winter 2012 The Christmas trees are going up and decorations are being put out. Soon The Garden Barn will be a Christmas wonderland. Unpacking all the boxes and beautifully displaying everything is always a challenge, but we are so excited about all the wonderful things we have to offer this year. Plan an outing to Quailcrest to shop and enjoy lunch in the farmhouse. We hope to see you at the Christmas Open House, Nov. 10-11, a fun weekend with food, artists and holiday cheer. Ginna Plan Ahead for Christmas Luncheons in the Farmhouse We encourage you to invite friends or family to join you for good food and friendly talk beside the fire at a Quailcrest lunch. Deborah and Ginna look forward to big soup pots of Basil Lemon Chicken, Greenhouse Sausage & Cheese, Brandy Bean, Calcutta and lots more favorites - maybe even a few new soups. Tuesday through Friday, - Nov. 27th - Dec. 19th. 11:30 a.m. & 12:45 p.m. $10.00 Reservations Required 330-345-6722 TUSCAN BEAN SOUP for a CROWD This is a delicious way to remove winter s chill. 2 C. dried white bean 1tsp. salt Water 1tsp. black pepper 3/4 C. chopped onion 2 tsp. basil 1 tsp. minced garlic 2 tsp. oregano 1T. Vegetable oil 2 tsp. rosemary 2 C. finely chopped carrots 1 tsp. thyme 2 C. finely chopped celery 8 C. water 4 C. chopped tomatoes 8 C. thinly sliced cabbage Place beans in stock pot and add water to cover. Bring to a boil and cook for 2 minutes. Remove from heat and let stand covered, for 1 hour. Drain, remove from pot and set aside. Sauté onion and garlic in oil in pot for 4 minutes. Add celery and carrots and cook for 2 minutes. Stir in tomatoes, salt, black pepper, basil, oregano, rosemary and thyme. Add 8 cups water and beans. Bring to a boil, reduce heat and simmer for 1 hour. Add cabbage and simmer for 1 more hour. Serves 24
