Variable blade adjustment allows for differing thicknesses of sliced product. The Berkel slicer is designed to produce consistent slices while ensuring the highest yield possible. SLICER OPERATION CAUTION: You must be age 18 or older to operate the slicer. Exercise extreme caution when using the slicer, the slicing blade is extremely sharp and can cause serious injury. Failure to follow these operating procedures may place a strain on the slicer components and mechanism, which can result in premature breakdown or damage. Before positioning the speed lever/switch to the desired setting, ensure the slicer is powered off. Do not change speeds while the slicer is running. Do not shift from manual to automatic setting (or vice versa) while slicer is running. Berkel 818 Series: Auto Mode... 1. Place shift lever in desired speed setting with left hand and move the slicing table with right hand (using the slicing table handle) until you feel it engage.. LO... engages the 45 slice per minute long stroke (for slicing large products). HI... engages the 80 slice per minute stroke (for slicing small diameter products). - When slicing table engages, move hands clear of machine. and bottom of slicing table tray. 4. Turn power switch to "ON" position. - Product will automatically slice. 5. Turn power switch to "OFF" position when slicing is Manual Mode... 1. Place shift lever to "N" setting. - N (neutral)... is used only for manual operation of the slicing table. In manual operation you must hold slicing table handle and manually push and pull the slicing table back and forth to slice product. - If you do not use even smooth strokes, product quality and appearance may be affected. CAUTION: Use only your right hand when moving the slicing table back and forth. Keep left hand clear of the machine. PAGE ONE

Place shift lever in "AUTO" setting with left hand and move the slicing table with right hand (using the slicing table handle) until you feel it engage. - When slicing table engages, move hands clear of machine. 2. Turn the speed switch to the desired setting. LO... engages the 40 slice per minute stroke (for slicing large products). HI... engages the 60 slice per minute stroke (for slicing small diameter products). 3. Turn thickness control knob for desired slice thickness. 4. Place product on slicing table tray. 5. Turn power switch to "ON" position. 4. Press green "Start" button. 5. Move slicing table back and forth with right hand using smooth and even strokes. 6. Press red "OFF" button when slicing is To Adjust Thickness: The Thickness control knob allows you to vary the thickness of slices from paper thin to more than 3/4 of an inch thick. To Make Thinner Slicers... Turn thickness control knob clockwise (right). To Make Thicker Slices... Turn thickness control knob counterclockwise (left). The numbers on the knob help to identify the thickness that's "just right" for a product. PAGE TWO
SHARPENING BLADE CAUTION: Always think safety first! The knife blade is extremely sharp and can cause serious injury. Never touch a rotating knife. Keep hands clear of all moving parts. Always turn slicer off when not in use. Always turn thickness knob as far right as possible when not in use. Remember that the knife blade is exposed when the sharpener assembly is not in use. A sharp knife blade saves money because it cuts product cleanly with the least amount of waste. The knife blade is sharpened at least once a day when the slicer is cleaned and sanitized. Sharpen the knife blade whenever you notice wavy slices or excess scrap. To Sharpen Knife Blade: pull the sharpening lever with left index finger until it stops. 7. Turn slicer "ON" with right hand. - Hold sharpening lever for approximately 10 seconds. - Release the sharpening lever partially for another second. (This partial release allows the front inside sharpening stone to remain in contact with the front of the blade to remove any burrs that may have been caused by sharpening). 8. Turn the slicer "OFF" with your right hand. 9. Return sharpener to storage position with your left hand. 10. After sharpening, clean and sanitize slicer. CHANGING THE SHARPENING STONES NOTE: Refer to the manufacture's operators/ service manual for exploded views of sharpener assembly and parts identification. 1. Turn slicer to "OFF" position. 2. Remove sharpener assembly by grasping the top handle with your left hand and lift until it stops. 3. With your right hand, push release clip back and, with your left hand, lift the sharpener assembly off the slicer. Once the knife blade has been cleaned and sanitized... 1. Turn slicer "OFF." 2. Set speed selector/shift lever to: - Speed selector to "N" (Model 818). - Shift lever to "Manual" (Model 919). 3. Pull slicing table towards you. 4. Turn thickness control knob full right. 5. Lift sharpener assembly with left hand. - Rotate into sharpening position and lower one stone on each side of blade. 6. Look underneath sharpener cover to locate sharpening lever. Place left thumb on sharpening cover for control and 4. Unscrew locking knob. The sharpener and its cover are now able to be separated. 5. While gripping the stone firmly with your left hand, remove the stones from the shaft - Use a 10 mm Wrench to remove stones. Sharpening Stone (Cup Shaped)... is mounted on a left-hand threaded shaft. Turn nut clockwise to remove. Deburring Stone (Cone Shaped)... is mounted on a standard right-hand threaded shaft. Turn nut counterclockwise to remove. 6. Install new stones and reassemble sharpener. - Ensure the sharpener fits into the guide pins inside its' cover and tighten the sharpener cover locking knob. 7. Replace sharpener assembly on slicer. - Align release clip with slot on slicer frame and let sharpener assembly drop down. - The sharpener assembly must be all the way down, protecting the top of the knife blade. - The sharpener assembly must be all the way down, protecting the top of the knife blade. Adjustments to the sharpening stone height and deburring stone angle should be performed by a service technician. CLEANING SHARPENER CLEANING & MAINTENANCE NOTE: Dirty stones cannot sharpen!!! If sharpening stones become coated with food fats (because of failure to clean knife blade before sharpening), they must be cleaned or replaced. Coated and dirty stones will never sharpen effectively. 1. Turn slicer to "OFF" position. 2. Remove sharpener assembly by grasping the top handle with your left hand and lift until it stops. 3. With your right hand, push release clip back and, with your left hand, lift the sharpener assembly off the slicer. 4. Unscrew locking knob. The sharpener and its cover can now be separated. 5. Clean the cover. - Use a solution of Multi-Purpose Cleaner and a clean soft cloth. Rinse with fresh water and air dry. - Do not apply water or cleaning solution directly to sharpener mechanism. 6. Inspect sharpening stones for unrestricted movement (rotation). - If they bind or do not turn freely, shafts must be cleaned and oiled with a food grade oil. - If stones are dirty or coated with food fats, clean or replace them. PAGE FOUR -- Wash stones with Multi-Purpose solution and rinse. (Do not wash entire sharpener assembly. If sharpener assembly accidently gets wet, immediately dry and thoroughly apply food grade oil.) 7. Apply food grade oil to all moving components, shafts, posts, and locking knob threads.. - Work moving parts back and forth to allow oil to penetrate. 8. Replace sharpener assembly on slicer. - Align release clip with slot on slicer frame and let sharpener assembly drop down. NOTE: Refer to Hardee s Cleaning Procedures Manual for cleaning product mixing guidelines and specific applications. DAILY External Surfaces and Parts: Clean all exterior surfaces and parts. - Use a solution of Multi-Purpose Cleaner and a clean soft cloth. Rinse with fresh water and air dry. - Rinse all parts thoroughly. - Apply a solution of sanitizer to all food contact surfaces. - Do not apply water or cleaning solution directly to sharpener mechanism. Knife Blade: 1. Clean the knife blade. - Use a clean wet sponge or clean soft cloth moistened with a solution of Multi-Purpose Cleaner. - Rinse using a clean wet sponge or clean soft cloth moistened with fresh rinse water. - Sanitize using a clean wet sponge or clean soft cloth moistened with sanitizer solution. - Allow to air dry. 2. Clean the knife box (shroud area around knife blade) only with Berkel cleaning brush. - Use cleaning brush moistened with a solution of Multi-Purpose Cleaner. - Rinse using cleaning brush moistened with fresh rinse water. - Sanitize using cleaning brush moistened with sanitizer solution. - Allow to air dry.
3. Lubricate Slicer Slide Rods with Berkel Oil. WEEKLY 1. Clean sharpener assembly. (Refer to Cleaning Sharpener). TROUBLESHOOTING Note: Refer to Equip 1701, Troubleshooting Guide, for information. PAGE FIVE
