TOMOGRAFI ELEKTROMAGNETIK UNTUK PEMETAAN 2-D KANDUNGAIIN KELEMBAPAIIN BERAS ABSTRAK Peralatan yang boleh dipercayai dan kos efektif semakin diperlukan dalam penilaian secara fizikal dan kimia terhadap barangan makanan dan bahan-bahan pertanian. Salah satu daripada ciri-ciri yang terpenting yang mencirikan kualiti makanan ialah kandungan kelembapan. Atribut ini sentiasa dikehendaki oleh ahli teknologi makanan agar dapat melakukan penilaian terhadap kualiti produk. Tesis ini adalah berkenanan dengan pembangunan dan aplikasi tomografi elektromagnetik dalam aplikasi kejuruteraan makanan, terutamanya dalam penentuan profil kelembapan bijirin, contohnya beras. Terlebih dahulu, suatu algoritma songsangan, iaitu Teknik Iteratif Pembinaan Semula Secara Serentak (Simultaneous Iterative Reconstruction Technique, SIRT) dibangunkan dan prestasinya dinilai dengan menggunakan simulasi pengkomputeran. Kebolehgunaan algoritma ini diuji dengan membandingkan imej-imej pembinaan semula dengan model-model sebenarnya. Seterusnya, algoritma ini diaplikasikan dalam satu siri eksperimen yang dijalankan di dalam makmal dengan tujuan untuk mengesan dan memeta jumlah kelembapan dalam beras. Teknologi tomografi elektromagnetik ini mengeksploitasi kesensitivitian gelombang-gelombang radio terhadap nilai permitiviti (a) dan konduktiviti (6) bahan dimana isyarat-isyarat merambat melaluinya. Suatu vektor mass aliran diperolehi dengan menggunakan radar penembusan bumi (ground penetrating-radar, GPR) yang beroperasi pada frekuensi dominan 1 GHz, keluaran RAMAC Corporation Inc. Sweden. Ukuran-ukuran diambil dari pelbagai kedudukan berdasarkan Susukan Ofset Berbilang (Multiple Offset Gather).

Data-data tersebut diproses terlebih dahulu sebelum disalurkan ke algoritma SIRT bagi pembinaan semula imej dalam dua dimensi. Keputusan eksperimen menunjukkan keberkesanan algoritma SIRT dalam pendedahan lokasi yang berkelembapan tinggi secara tepat dan juga informasi kuantitatif yang penting. Akhir sekali, fungsi-fungsi empirikal bagi nilai keperlahanan dan juga pemalar dielektrik yang bersandar pada kelembapan bijirin beras pada suhu bilik dan frekuensi nominal 1 GHz turut diramalkan. Secara kesimpulan, projek ini telah memaparkan buat kali yang pertama bagaimana kelembapan bagi bahan makanan telah didedahkan secara ketakmusnahan dan ketidaktembusan dalam dua dimensi.

ELECTROMAGNETIC TOMOGRAPHY FOR 2-D MAPPING OF MOISTURE CONTENT IN RICE ABSTRACT In making physical and chemical assessments of foodstuffs and agricultural materials, reliable and cost effective instruments are increasingly needed. One of the most important properties that characterize food quality is moisture content. This attribute is regularly being sought after by food technologists in order to derive at an indication of the product's quality. This thesis deals with the development and application of electromagnetic tomography in food engineering applications, especially in moisture content profiling of cereals such as rice grain. An inversion algorithm, the Simultaneous Iterative Reconstruction Technique (SIRT) is first developed and second its performance is evaluated using computer simulations. The applicability of the algorithm is assessed by comparing the reconstructed images with actual models. This algorithm is then applied to a series of laboratory experiments, which are aimed at detecting and mapping the total moisture content in rice. The electromagnetic tomography technology exploits the sensitivity of radio waves to permittivity (E) and conductivity (a) of the material through which the signals propagate. Vector of travel-times is obtained via ground-penetrating radar (GPR), operating at a dominant frequency of 1 GHz and manufactured by RAMAC Corporation Inc. Sweden. The measurements are taken from multiple planes, according to multiple offset gather. These data are processed before they are fed to the SIRT algorithm for two-dimensional image reconstruction. The experimental results demonstrate the effectiveness of the SIRT algorithm in revealing accurately the locations of higher moisture content and also the important quantitative xv

information. Finally, empirical functions of slowness value as well as dielectric constant dependence of moisture of rice grain at an ambient temperature and at nominal frequency of 1 GHz are also derived. In conclusion, this project has demonstrated for the first time as to how the moisture content of food material is revealed nondestructively and non-invasively in two-dimensions.
