Completely automated to give a handmade result MasterFormer is the right answer from Townsend Further Processing to increasing demand for high quality end products. Using minimum pressure and in a limited number of mechanical operations Master Former portions and forms meat dough into an end product comparable to that made by hand. More with MasterFormer Line With its complete MasterFormer Line, Townsend Further Processing introduces a flexible production line for high quality filled and unfilled products. MasterFormer, developed for the production of Steak Haché, a delicately structured French speciality, is the basis of the system, which by adding individual modules can be extended into a complete MasterFormer Line for the production of cordon bleu and many other filled end products. Individual filling modules The MasterSlice and MasterFill modules allow solid as well liquid and paste fillings to be added to the basic raw material in the supply line to MasterFormer. MasterFormer then portions giving the end product its required shape using minimal pressure. This end product will have been made on a fully automatic production line and can be packed directly onto trays for sale fresh or, alternatively, is now ready for further processing.

Classics and innovative new products A growing consumer market welcomes with open arms innovative new quality products, which are quick and easy to prepare. With its MasterFormer Line, Townsend Further Processing makes possible a flexible production process allowing producers to set as well as follow trends. A Master Former Line with individual modules is the solution for the production of both real classics and completely new ready-to-eat creations. Quality Townsend Further Processing is very demanding when it comes to making products of consistent high quality. Controlled supply of the basic raw material, the exact addition of fillings and forming the end product using minimum pressure ensure that a Master Former Line meets the highest demands. Besides giving excellent end product quality, the controlled production process keeps ingredient waste to an absolute minimum. Chicken cordon bleu with slices of ham and cheese. A flexible production process At the head of a MasterFormer Line, the meat pump provides for the controlled supply of meat dough. From its hopper, a consistent volume of the basic raw material is deposited onto a single transport belt or onto two belts positioned one above the other. To achieve a particularly loose structure for products such as Steak Haché, an extra grinder head can be used. Various types of outfeed plate are available. Depending on the end product required, it is possible to use these to vary extensively the thickness and width as well as the structure and texture of the meat dough spread on the belt. Loose structure with an extra grinder head. Cordon bleu outfeed plate. MasterSlice, the slicer MasterSlicer adds a cut-to-measure slice of solid filling to the basic raw material on the belt. Control of this precision process is in the hands of MasterFormer, which ensures that the slice of ham, cheese, sausage, chicken, fish or salami finds its way to exactly the right place. Using a second MasterSlice in the supply line, a second slice can be added if required. This is the ideal solution for producing the perfect cordon bleu completely automatically and without any need for correction by hand. Two MasterSlicers for slices of cheese and ham for cordon bleu products.

MasterFill, the extruder MasterFill is used to add liquid or paste fillings. A pump propels filling present in the hopper to MasterFill at a controlled and consistent pressure. MasterFill ensures that the filling is deposited onto the basic raw material on the lower transport belt at exactly the right place and in exactly the right quantities. This can be a measured quantity of ragout or even a sauce such as béchamel, ketchup or saté. MasterFill is also able to handle less liquid fillings such as melted cheese, which are portioned using the quick action of a cutting wire. Supply The two supply belts conveying the basic ingredients and filling connect to the MasterFormer transport belt. At this point the meat dough on the top belt is deposited without any friction onto the filling layer. Knives in the forming unit then cut the stream of meat dough and filling, still continuous at this stage, into exactly measured portions. If unfilled end products are being made, only the upper supply belt to MasterFormer is used. MasterFill for fluid or paste fillings. MasterFormer, the shaper Townsend Further Processing developed MasterFormer for the automated production of Steak Haché. MasterFormer s end product meets the high demands of its consumers, for whom meat texture and structure are critical. The particularly low pressure used to form this vulnerable product is also eminently suitable for the production of a broad range of high value filled and delicate ready-to-eat products. Forming units In a smooth movement, the side parts of the forming unit push the portioned meat into the required shape. The upper part of the unit then descends onto the product to finish its upper side. Each time the unit moves away from the product, the release mechanism in its upper part ensures that the product remains undamaged on the belt.

Variations in shape The forming unit can be set up in such a way as to allow different shaped end products to be made in a single production process whilst maintaining constant volume. Changing the unit is quick and easy and, as a result, product shape and dimensions can, if required, be altered in a very short time. Operation and maintenance Apart from forming the product, other important tasks for Master Former are using the meat pump to supply the flow of basic raw material and MasterSlice and/or MasterFill to deliver the various fillings. Control of the whole MasterFormer Line is from a central, user-friendly screen interface. The system s open build and minimal ingredient spill during the production process mean that maintenance and daily cleaning of the MasterFormer Line take up very little time.
