And I say health goals because every one of us has a different objective. It could be weight loss. It could be healing to immune condition. It could be diabetes, it could be menopause, it varies. That s not important what your goal is. Because it all comes down to the same thing. That s what my teaching is. Yes, it starts with food, but it goes beyond the food. No matter what condition you have, you can be sure that by nailing down your nutrition and adopting the proper plan for you, for your nutrition, and healing your mind-body connection, you will relieve a great majority and in most cases, all your symptoms. And what I wanted to do through this episode today is bring some of those women that have done the work that are now thriving forward to you so you can be inspired by their journey. I know for me, when I was in my place of sickness six years ago, the fact that I was surrounded by other people who had done the same work providing me a lot of inspiration. Thank you so much for being my first testimonial, for being the first person that will inspire hundreds and thousands of other women listening to the podcast and transforming their life. 5 Thank you, thank you. And, also, being open to share your story because I know for some people, it s very difficult. So, thank you very much for doing that. Oh, you re welcome. So, Kim, the very first question that I have for you is give me a little bio of Kim before we met online. Who was Kim before? Oh, so, I was probably just starting to comment to myself the last few years, and working on us, dieting has always been an issue for me, so, food, emotional eating has always been a really big issue. I actually remember you re going to laugh at the irony here because I remember the first time that I went to your Facebook page. I was sitting down outside, having a tea, and I was scrolling through Google and whatever, and I thought, You know, I think I m going to do this high-fat, low-carb diet. Even though it s not healthy, even though fats are really bad for your arteries, I was at that point where I was just totally just disgusted and desperate. And I thought, You know what? And I m almost embarrassed to say this as a nurse, but you can laugh in hindsight, I thought I don t even care if I blow my cholesterol through the roof because I just need to do something to get this weight off. And, so, then, somehow I found your page, and I thought, Okay, I m going to check this out. And that s when I started learning a lot about lowcarb, high fat, and even though I ve been a cardiac nurse forever, like, my history is also ICU and CCU and some emergency nursing. I remember the first two weeks, I was absolutely exhausted because I Google everything. I went into the New England Journal of Medicine, anything that anybody mentioned that was a research, I went back and I had to see the data. Stephanie Dodier CNP Page 4

6 Because I m a research nerd anyway, but, also, because I needed my own proof. I m not going to just blindly follow Oh, that sounds like a good idea. And so, actually, it was a really, really cool thing and a really enlightening thing to realize that, Wait a minute. This is actually for your coronary arteries. This is better for reducing heart attack. This is better for your blood pressure. And type 2 diabetes which was like the leading cause of kidney disease for preventing it. And I was pre-diabetic 2, I was pre-diabetic just before. So, like I have the round apple shape and the chubby belly, skinny legs kind of thing. So, yeah, I was definitely like heading into trouble because my blood sugar was going up, and I had weight on, and blah-blah-blah. So, it was huge amount of learning, and I can imagine like how much other people your average person needs to learn because [0:08:27] medical nursing background, I was not aware of all the facts. I really wasn t aware of all the facts. And, yeah, so, it s been incredible learning like absolutely incredible learning. It s so cool. And now like we talked about before there are several nurses on my floor, it s a cardiac floor, and the nurses there are starting to follow. There s three of us now that are like low-carb, high-fat, and lots more that are asking questions. And, it s interesting because the ones that are asking questions they haven t been exposed to the old data that I have been as a nurse graduating in And, so, they re actually picking it up faster and they re athletes and so, they re doing research now and say, Hey, wait a minute. You know, like, super athletes are now doing fat burning instead of carb burning. [We re just like just, Holy cow! 0:09:14]. And cutting down on the protein would also overwork your kidney if you have too much protein. So, it s huge. It s just absolutely huge like I was blown away. And also, I was really excited because here I am in this desperation saying, Oh, this is a diet I can do even though it s maybe not the greatest for my health in Stephanie Dodier CNP Page 5

7 what I found out and learned through the process is that, it s actually the best for your health. And, so, that was, yeah, really cool learning. It s an amazing story. So, to help the people listening that don t know you, can you paint us a picture of your health, your mood, your weight, and, how you were before you started? Like when you were desperate, like how were you from a health-wise and a mood perspective? Mood perspective, I m perimenopausal, I m 50. And so, I was perimenopausal. I was on the pill, the birth control pill because of really bad periods, heavy periods, and, also, because of just incredible PMS. I just started getting incredible PMS and the anxiety and depression that came with that was overwhelming. And so the birth control pill helped with that, but I haven t been on the birth control pill in months because I no longer need it, right? Isn t that incredible? It is so incredible. It really is, it really is. And I can feel like sometimes, you know, we have oh, a little bit more carbs or you go ahead and have a little bit of starchy carbs. And if I m in a PMS zone, I can feel it, I can definitely feel the difference. [0:10:47] with inflammation, because I have osteoarthritis in my knees. And so, for me, it s, you know, like I m on my feet for 12 hours a day, so, it s really important to get a grip on that especially as we get older and the inflammation is a lot lower on the low carb way of eating. It s not a diet. It s not a diet. It s a way of eating. It feels like a diet at first because it s different and you tell yourself you re going on a diet. But then, you realize, no, it s not a diet, it s a way of eating. And Stephanie Dodier CNP Page 6

8 It s so much more. It totally is, it totally is. It s a way of living your life and it s actually part of your self-care to give yourself what you need. So, I heard you say you were pre-diabetic or diabetic. You had significant perimenopause symptoms. You had weight to lose. You had inflammation, osteoarthritis, and somewhat of a depression, depressive mood as well. Yeah. That was Kim before. Yes. And then, Kim found my page and took her background of education of medical knowledge and went in and studied. How is Kim now? It s been what? Nine or ten months we ve known each other? Has it been that long? Maybe I think it s Six months. Yeah, something like that, yeah. So, how is your health now? It s way better. Well, my blood sugar is, for example, it was I remember it was 6.7, and my doctor said, You know, you re pre-diabetic. You got to watch it. You have that fat around the middle tight-body shape. And so, that s where it was 6-7, 6-5. And take it at work all the time. And I actually started doing that because I thought, I wonder if I m going to go too low? which I never did. But I m 4.9 to 5.1, like pretty much all the time. Yeah. Stephanie Dodier CNP Page 7

9 Amazing. And, yeah, sometimes, before eating, after eating, [add 0:12:36] some random glucose. Stable. So, and, so, you ve no longer pre-diabetic. Your inflammation has gone down in your knee. Yeah. Your moods are way better. No longer symptoms of perimenopause. Yeah, that s right. And you feel better, I m assuming from a mood perspective, how are your moods? Better, better. And every time, you know, you do go a little bit of a funk because I still have a little the perimenopause. Actually, like the other stuff, because your program is not just about food, and learn lots of other things, so, I ve started meditating, I ve done some tapping and journaling and gratitude journaling. And so, it s not just, Oh, I feel better because I lost some weight. And it s an all-inclusive, kind of holistic everything approach. And, so, it all kind of comes together. So, let s dive into this. So, we ve talked a lot about diet and how physically it got your body better, but, one of the differentiating factor of how I put out my information is that there is a connection between the body and the mind. Totally. Right? And there s an emotional component to healing. So, you didn t know that before coming in? Is that something you learn while you were working with my information? Or? Stephanie Dodier CNP Page 8

10 Yeah. It just was everything coming together. It was everything from your program coming together because I don t think there s anyone out there, like, if you eat less food, you re going to lose some weight, right? But, yet, we don t. And it s the emotional connection that s missed. You can write out 42 diets for people to have and, yes, they ll lose weight, but if they don t have that connection and heal what drives them to do do you know what I mean? Like what drives them to do that, then, it s ineffective and it s not long-lasting because you can t keep it. It s work. How has that impacted today s life from dieting before? How has that changed you in face of your health and your weight? Well, I don t have the hunger cravings as much because you re having like higher fat and stuff. And the other thing is, you know, for example, like I had turkey dinner at a friend s place and I made the decision to say, You know what? I m going to have some potatoes and stuffing. And so, I was okay with that because a year ago or something like that if I had done that, I would beat myself up and say, Oh, you know why I did this and I did this, and, I failed. Which, again, makes you feel more down the roof because you re beating yourself up. But it s about making a decision, like, Yeah, I m going to have this. And then, I m going to go forward and get back to my regular way of eating. And it s for many of us women, type A personality, I d like to call them, it s we re aiming for perfection and that s what makes us fail. Yes. And that was a big thing for me, not just with eating, but with a lot of things in my life. It was like an all or nothing. You know, I would join the gym, and I was going to do all these things. And then if I couldn t do it, I saw myself as a failure. And then I would stop. And that was like and so procrastination and perfectionism are actually connected more than I thought, right? Yeah. 11 And, so, I totally fell into that. And, then, I have this little thing in my head, it s a picture of a turtle and it says, It doesn t matter how fast you re going as long as you re moving forward. That s amazing. And, right, yeah. So I just tell myself that. That s very powerful for other people to hear because there s a lot of people stuck there right now, right? And, unfortunately, with the information that the industry puts out there are just cutting back on calories and exercising more. Women are led to fail because it doesn t work and then they get trapped in that place that it s their fault. They re the bad person, right? And because women are women, they re way more susceptible, too, because they re more concerned about their body image, they re more judged by their body by other people in society whether we want to admit it or not, that s still out there. So, it s also about empowering yourself to love yourself, accept yourself, and accept help along the way like your Facebook page is so supportive. And that s why I kind of blossomed on it and opened up more because there was people that came and opened up to me right away, and it was just so comfortable and so easy. And I m not one to put myself out there all the time, but it was a safe place. And that s a big deal. And it helped you obviously because that s one of the component is support, right? Totally. Now, you d also did the course, my course on eliminating the food craving. How was that? That came later into your journey. How did that impact you? Stephanie Dodier CNP Page 10

12 The hardest thing for me was not having cheese. Oh, my gosh, it was like, I just can t wait to [0:17:18] get this over with, so I can have some cheese and see if it s still okay, which it was, which it was. Yeah, but, I mean, it wasn t bad because you re not hungry and you just have to focus on other parts of your life, right? And one thing I learned through this whole process is that I wasn t giving myself enough self-care. And that was huge through everything, through the dietary stuff, through the every part of it that I wasn t giving myself enough self-care. And, I think, like a lot of women, I was in a blended family. So, my exhusband and I had six children, his, hers and ours. And, yeah, it was a lot of work, and, you know, when you don t put yourself first, and sometimes, you don t even take care of yourself well enough. So, sometimes, if I was like struggling a little bit, thinking, Oh, you know, I feel like eating, then, that s a good night to do a self-pedicure, or something like that and give yourself a little boost, yeah. So you found other mean of rewarding yourself. Totally. Totally. And you feel as good as if it was food because so many of us food we think is the only way to make ourselves feel better. And I was this big emotional eater like in the evenings, I loved to snack, and, you know, I m not a sweet person, but, like, try to walk by me with a bag of Lay s potato chips, and, yeah. It was gone. Yeah. And, I mean, it s okay to have treats, but, it s not difficult and there are so many good recipes out there that you can access now. It s amazing. Stephanie Dodier CNP Page 11

13 So, what is the feature about the course that you like the most; that helped you the most? The communication. The communication and the response from you. You were always like available and you were very involved. And your passion like it s I felt cared for to know like it s not like, Oh, my name is Stephanie and I have a degree, so, I m going to teach this. It s not like that. It s like you have a personal investment in women, in helping women grow and becoming who they re meant to be. So, who is Kim now? I care a lot less about what I look like. I don t weigh myself. And, yeah, like I know I ve lost weight because I ve lost sizes, but I honestly I don t know I have no clue what I weigh right now. It s not a number game anymore. No, it s not. No. I m learning to accept myself because I mean, and, you know, I had my baby, my little girl Kaylie who s almost six feet tall, was over 9 pounds since she was born. So I have a kind of a stretched [poochy 0:19:39] belly. And now, it s like it doesn t bother me. It s who I am. It s who I am, it s where I am. And that s part of the master course, too, because I started following Jennifer Lyle. And, so, that was really big for me because and not that everybody wasn t great in the master class, but, that s what I needed at the time. And, so, I m also learning to trust my intuition more which is, you know, really big and, yeah, to do different types of healing, and, yeah. It s a very touching story because what you re describing is exactly what I meant for people to have for experience. And that it s actually happening. Stephanie Dodier CNP Page 12

14 It really touched my heart. Because I want my work to be different. I want my work to not be about calorie, and not about, yes, it s about losing weight, but it s not about losing weight. Totally. If that makes any sense. Yeah, totally. It s about getting healthy. Yes. Not looking in the mirror and picking everything apart. And looking in the mirror and accepting and loving who you are, and, see, that s the thing that s different about your course is that it s an all kind of an all-inclusive approach, it s a holistic approach and so, through the course, I have learned to look in the mirror, and not pick apart Kim. And when you do that, and you start to come into your own a little bit, then, the other stuff just falls into place, right? You re not going to do this, you re not going to do that to yourself and you treat yourself better. And you re not as hard on yourself because you ve learned to love yourself more and that s what it s all about. And you know what? Once we ve eliminated the physical craving of sugar, the physical craving of food intolerances, then, we re left with the emotional eating. And what I have experienced myself and many women, just like you said, experience, is we beat ourself up so much that we drive ourselves to binge eat and have more craving because of the emotional damage we do to ourselves. Nobody else does it but us. That s right. That s right. So, attempting to deal with the emotional eating strictly by just getting off sugar is likely not sustainable and not enough because you still are going to have the mental game in your head. Stephanie Dodier CNP Page 13

15 Yes, the connection is massive, it s absolutely massive and you have to explore yourself a little bit and be honest with yourself. You have to not let yourself fall back on I had 101 excuses for not doing different things and you have to just be straight with yourself. But likely, and I m going to ask you this question, likely there was excuses where they link to your desire to be perfect in the process. Oh, my gosh. Bang on. Yes. Yeah, bang on. Yeah. That s exactly it, all or nothing. Well, just the type of work you do tells me a lot about you being you re like a cardiac nurse and ICU, those are the top performing nurses, right? Yeah. The people who are the type A personality, so, I m not surprised to hear that from you. It goes hand in hand together. That s yeah, I can see that. I can see that. So, if you had to give yourself three advice, back, let s say, a year ago, like talk to yourself but yourself being all the other women listening right now that are stuck there, what would you say to them? Three things. First thing is one thought can change your life. A simple thought can change your life. The other thing would be be gentle with yourself. And the third thing would be to learn from mentors that are worthy. And what I mean by that is like, you know, I ve checked out other Keto sites and other low-carb, high-fat sites, and, you know, they had the key high-fat foods that aren t necessarily healthy. So, do your homework and make sure it feels right for you, and trust the process. Stephanie Dodier CNP Page 14
